I bought a chicken yesterday, I always cook them in a big cast iron casserole dish, it doesn't seem to dry out, it is easy to strip the meat as it just falls off the bone. Perhaps because it stays in the oven for a couple of hours. Whilst it was cooking I made roast potatoes, parsnips, cauliflower cheese, broccoli and mashed swede and carrot and Yorkshire puddings.
I also made a rhubarb crumble, and a banana bread and a nut loaf.
So dinner was chicken/ nut loaf with the veg as per above.
I then made the packups for tomorrow, and chopped a load of fruit.
Is it just me or do others find that a lot of Sunday is taken up preparing for the week ahead? I was tired after dinner and fell asleep, hence not being able to sleep now.0 -
Chilli tonight, got several peppers to use up, and it's an easy meal
JIL I know what you mean with Sunday prep, whilst it's a pain, it does save time through the week. Yesterday I sliced the Gammon, popped 3/4 of it in the freezer, boiled half a dozen eggs to use as snacks or pop in for work lunches with a salad, grated the base for coleslaw, half of which we had yesterday, the rest will be for work lunches. I grated a block of cheese, which will sit in the fridge to add to salads, sandwiches etc, I find it lasts longer than when it's sliced, DS's slices are an inch thick :rotfl:
I also prepped for tonight's dinner and made work lunches for today, before sitting in the garden with a large glass of wine as a rewardNote to self - STOP SPENDING MONEY !!

Gosh the motivation is low this week, :mad: such lovely weather this weekend that i didn’t do my weekend shop, i haven’t defrosted anything and i have nothing prepared for lunch. The bread i got im not impressed with its very stodgy so don’t think i fancy that at lunchtime – so il dip my hand in the freezer at lunchtime and pull something out for tonight but also think i will pop to the local shop and get a chicken, roast that and strip the meat off – and go from there :money:0

We don't have a set day as it depends on what shifts my girls are working, but we often have a day of batch cooking for the days when we need to grab something quick.There is something delicious about writing the first words of a story. We've been out walking all morning and had cake (huuuuuuge slices) and coffee half way round the walk so lunch hasn't been needed yet, I made us sandwiches but they are back in the fridge.
Supper this evening will be some YS steak and ale pies from the freezer and some mashed potato, broccoli and gravy, fruit and yoghurt if wanted and our usual coffee.0 -

We had salad, used up some leftover chicken from yesterday's dinner with some bacon that also needed using. I had a boiled egg and a small tin of tuna with some jersey potatoes.0
