    HM burgers on linseed flour roll for me, ciabatta for him, going to try making onion rings using egg white powder for the crunchy texture, works with chicken so should be okay 👍

    Er, had Deliveroo last night. Two kinds of houmous, guacamole, olives, Feta, tzatziki, grapes, seafood sticks.

    Rare breed pork chops tonight, possibly with sweet potato chips and steamed courgettes.

     I've got a recipe from Farmer's Weekly, which uses canned salmon and cheese. It could be made more Mediterranean by swapping out the Cheddar. It looks to be quite a cheap recipe and gluten free. 

    Care to share?  I have tinned salmon to use up.

    I spotted a couple of lovely rind on pork leg steaks in Waitrose yesterday that I thought would be great this weekend.  Get home and discovered the OH had also been shopping and got a nice little pork roast for Sunday so leg steaks have gone in the freezer.  Not sure if he'll want the new potatoes I bought as he prefers roasters.  If not I'll likely cut them into nice chunks and pop them in the freezer as we go on hols on Tuesday and they won't last til we get back.  Alternative is to leave a bag of groceries behind my car and text a friend to come and collect the freebies and ask him to pop back the day we return with some milk.

    Tonight we are having spinach cannelloni and tomorrow we are having chilli chicken masala, looking forward to both as we’ve got into a habit of getting takeaway at the weekend :-)

    The rare breed pork chops got a Parmesan crust and they were okay but a bit disappointing. It was an American recipe from a Mediterranean Keto Kindle book by a chef. 

    I have been trawling newspapers, magazines and supermarket websites for Mediterranean recipes. Found a delicious looking soup in the Mirror. Originally it came from a family in Italy, which earned a place in the Guinness Book of Records in 2012. The nine siblings had a combined age of over 800 years and the eldest was 109. They had their version of minestrone every day for lunch, with a piece of bread and a glass of wine. No recipe as such, just a list of ingredients bought from Tesco and a great photo. Might do that and have the salmon on Monday.

    @MrsStepford  Have you heard of the Pioppi Diet? I found the book at a book fair years ago, it’s got some lovely Mediterranean recipes and goes into quiet a lot of detail about the effects of a good diet for t2 diabetes and good health in general 

    talking of Mediterranean food, we’re having Lamb Kelftico today, I’ll chuck in a few baby spuds for him, I’ll double up on peppers, courgette etc for me

    Yes @Islandmaid I've got the book ! Haven't tried the recipes yet but have noted down a few I want to try. Lamb Kleftico sounds good.

    Baked cheese and salmon mould (serves 4)
    Mrs B D Jackson, Austwick, Lancashire
    Farmer's Weekly

    1 x 213g can red or pink salmon
    3 large eggs
    450ml milk
    75g grated cheese
    Salt & pepper

    Grease a deep pie dish well. Drain salmon and flake, discarding any skin & bones. Place in the pie dish. Sprinkle over half the cheese. Beat eggs and milk together well. Add salt and pepper to taste. Pour over contents of the pie dish. 

    Place the dish in a baking tin with 2.5cm water in it. Cook in a pre-heated Moderate oven 170C 350F Gas 4 for about 30 mins or until set. Take from oven, sprinkle on the rest of the cheese and brown slightly under a hot grill.

    We are intending to eat it hot. However the original recipe says 'when cold, garnish with cress and sliced radish and serve with a crispy lettuce salad' so we will try that this summer.
