Friday night was confit duck legs which OH spent hours prepping, with new potatoes and served on rocket.
Saturday morning I got to finish the potatoes with my grilled salmon, OH had smoked haddock with poachers.
Saturday dinner was pukka pies - snake and pigmies with beans.

Earlier on OH suggested soup and cheese for dinner which meant I sprang into action and made some soup.

I'm not sure it's my best ever and I'm not sure how to enhance it.....butternut squash, onions and a few mushrooms cooked up in stock, too thin so I added a couple of little potatoes and a handful of green lentils.  Once all cooked I've zizzed it to smoothness, added some worcestershire (which helped), a small amount of rocket, a few drops of hot sauce, zizzed again.  I've left it for now after adding a finely diced small courgette and some herbs.

But at last tasting it was just not very exciting.  I don't have any cream, sour cream, yoghurt to swirl in.  I'm wondering after reading elsewhere about adding pickled onions to a soup whether I need something along that line - lemon juice perhaps or cider vinegar?  Just to perk it up.     What does the collective think???

@Brie I was taught if you think it needs more salt, it needs acid. Or chuck in some blue cheese 😊

confit duck legs is one of our favourites, I am very lazy though and buy it in a tin, we have a huge tin sat on top of the fridge awaiting attention over Christmas 🙌

OH does a great job on prepping the duck but did manage to spill the fat all over the kitchen floor.  And so because it was a bit slippy he put a towel down to sop it up.  And left it there.  Hmmmmm.

I did wonder about adding cheese.....

Got one of those lovely salmon wellington's from Lidl today.  Will be serving with some new potatoes and perhaps some peas.

Like @Islandmaid I've been doing some stocking up as well taking advantage of the freebies or discounts that Lidl has on their app.  So some chocolate biscuits, crisps, cheesey snack biscuits, already bought a bottle of fizz.  And got my OH a box of the violent creams he loves (yuck!!)

  • A tin of chopped tomatoes, one of butter beans and smoked pepper mackerel and some fresh spinach (in a sauce pan, not all at the same time), with some garlic, paprika, pepper and salt.
Made some...not quite spinach pesto to go with it (aldi has pine nuts!). Nice and warming, pesto not necessarily needed.
