something that's a bit like chicken caccitore. basically chicken thighs, browned with onions and garlic, add tomatoes (passata this time) and cook for a while then add mushrooms. serve with pasta (or rice, or fries, or mash, or polenta)
I would add wine but I don't have any. I'll throw in some various herbs - normally I would mix dried herbs or a dried bolognaise mix with bread crumbs and use that to coat the chicken prior to browning. Adding the remaining breadcrumb mix to the pan to scrape up the good bits and that helps thicken the sauce. But not sure I can be asked to fuss that much so might just add a bit of roux if it's too thin. Took GS to Panto today, just a local amateur theatre one, was fabulous and he loved it 🥰 had put a chicken curry in the SC and steamed some rice before going. So easy grab when we got home. Made brownies yesterday too, so brownies and Icecream for pud 👍Note to self - STOP SPENDING MONEY !!
