I should, as a college-trained former chef, be hanging my head in shame. Husband has been clamouring for Indian takeaways and last time I had one, I was ill for a week. So I ordered Slimming World frozen chicken tikka masala from Iceland. Would feed two less greedy piggies, plenty of chicken, hot but not extra hot, plenty of sauce. Two packs = 8.50 and served with two packs of organic konjac rice £2 each = total 12.50 for two low carb, low salt, high protein meals which was cheaper than local Indian takeaway. I should have rummaged in freezer as I have okra and methi (fenugreek) in there, from Morrisons, to get more veggies in.4

I shall have to join you on the naughty step @MrsStepford because I baked a cake for dinner rather than eating the healthy soup from the fridge or the veg and tofu from the freezer. I just wasn't feeling very hungry this afternoon and was planning to skip dinner but then when I was in M*rks I saw duck eggs on the shelf and I've been wanting to try them for ages so I fell.
This is the cake I made as well as the sauce and apart from a small mishap with my bundt tin I can definitely recommend both recipes.
I think I should have gone over the tin with the oil again just before I poured the mixture into it because my tin has got far more nooks and crannies than the swirly one Nigella used, but I've eaten the evidence now so that's alright.4 -

Dinner delayed last evening as the oven has decided to stop working. Very time poor at the moment, chucking frozen pie n chips in oven tonight. DD is over to eat t as she’s getting the whole downstairs of their house ‘Amtico’d’ and she can’t go in till 8pm 🤣Note to self - STOP SPENDING MONEY !!

I just fried off some chopped streaky bacon in garlic oil, with some chopped onions and a half teaspoon of dried thyme and then added the cubed beef. Added peeled and chopped carrots and then put this into the slow cooker.
I added a small bottle of red wine (aldi) a beef stock cube, a squirt of tomato puree and just a little water to the frying pan I had just used. Then heated it up, poured it over the meat and veg in the slow cooker and cooked it on low for about 7 hours.
I added some whole baby onions (round shallots) and baby mushrooms at the start of the slow cooking.
Some recipes do say to add chopped bacon as a garnish but once it's in the slow cooker, then I dont tend to add anything. Husband did taste it last night and there was gravy left over once it was portioned up that he had on his Sunday dinner as he said it was so good.
Tonight I have flattened some chicken breasts to coat with parmesan and breadcrumbs. With actifry chips and salad.5 -

Also having an easy dinner tonight. Frozen cod from the feezer and air frying some chips with peas.6

It was a quick and easy tea tonight for me and the husband; I fried off left over chicken breast with mushrooms and onion, added some pesto and left over double cream to make a sauce and served it over penne. It certainly hit the spot after a tough gym session5
