    Chicken salad was great last night - going for lasagna tonight. Haven't made one in a long time!

    Tray bake here, it's just potatoes, chicken thighs, chorizo, peppers, courgettes, aubergine, onions, tomatoes.
    I do 2 separate trays, I dont put meat on mine, I just add some halloumi at the end.

    I used my fridge bits - lo roast potatoes + cooked sausages/bacon and added a small tin of beans with sausages.
    Been busy baking - used 22 eggs - made 2 huge lemon sponge puddings for tomorrow's lunch at SA + a jam sponge pudding for us.

    Salmon fishcakes and broccoli and green beans for me all from the freezer so no shopping to get.

     I'm digging out some chicken from the freezer to defrost for tomorrow I'm going to slow cook it as I have a jar of buttered chicken sauce my DD gave me, so I thought if I make a big batch I can portion it up for some quick frozen meals for later. I seem to have no end of chicken in my freezer to use up.

    I made some hummus yesterday and had that in some wholemeal pitta breads with YS salad, tomatoes, cucumber and grana padano, will probably have the same tonight.

    Drat my weary eyes.....I thought you said you'd made some humans yesterday and for some reason that made sense given that it was Hallowe'en!

    That gave me a chuckle @Brie. I also made Nigella's emergency brownies this evening as I needed cheering up because the weather is so horrible here today; eaten with passion fruit and rather elderly double cream from the depths of the fridge, yum.

    Had some leftover veg from last night so this went into a pasta bake. With salad and garlic bread and chicken Kyiv with truffle butter .
