    I seem to have a fridge full of peppers, so will make a Ratatouille. I will have mine with some roast potatoes and mozzarella. Odd but I like it. 
    Will do a cheese sauce and make cauliflower cheese and macaroni cheese. (Lunches next week)
    Will plate up a roast dinner for husband and inlaws, Gammon cooked yesterday, cauliflower cheese, root mash in freezer, so it will be actifry roast potatoes and a few veg in the steamer to finish it off. 

    Best get on.

    I bought some lovely big flat mushrooms from Lidl this afternoon so I roasted them with garlic and onions and then ate them with cheesy scrambled eggs and baked beans followed by a decaf coffee.

    I make 4 days worth of stuff up at once as Im just cooking for one.
    So am currently sorted with PB/choc overnight oats for breakies, black bean and cucumber spread (on HM toast) for lunches and mushroom and broccoli soup for teas....with banana and walnut loaf for desert.

    enough pork left over to have tonight which makes an easy meal.  OH has suggested tinned potatoes (which frankly I dislike) but I might have jacket or some other potato thingme from the freezer.  Maybe add some corn.

  • Tonight I fancy pasta. Still feeling the hangover from a busy Saturday so wanting to get some carbs in! Anybody got any suggestions for what sort of pasta? I usually go for carbonara or bolognese but looking to change it up.

    The OH often likes to have just pesto - which is nice.  Or he does carbonara - again nice but not my favourite even if he does do a great job of cooking it. 

    One of my go to sauces is to fry up some onions, garlic, add chunks of courgette and chorizo or keibasa and a tin of chopped tomatoes and let it simmer.  Herbs.  Love a nice thick sauce on wholewheat fusilli.  You could add mushrooms and or peppers too if you have some.

    I do a seafood pasta for husband and daughter, it's just frozen mixed prawns, mussels, squid defrosted and drained warmed up in a jar of  pasta sauce with chilli. 

    I love a pasta with roasted veg and feta. 

    I also do a creamy mushroom pasta, just a load of mushrooms sweated with shallots and cream/milk and parmesan and a little stock. 

    Tonight kept it simple, jacket potatoes with tuna and sweetcorn.

    I had yet another portion of vegetable stew with cheesy dumplings with the rest of the roast mushrooms from yesterday and some green beans and sweetcorn from the freezer followed by a handful of mixed nuts and a decaf coffee.

    Made sure I had the making for cheese sauce (aka went to Sainsbugs to get the packet everyone has recommended) and came home to discover OH has taken against cauli cheese with the gammon steaks.  Wants beans and chips instead.  That's fine.  I'll let him cook it!!
