I made falafels from scratch yesterday evening but omitted to use a thermometer for the oil so, although they taste nice, they are black rather than dark brown. I deliberately didn't take a photo as next time I hope to make a better job of them. This evening I made these delicious spinach pies from the Falastin cookbook that I bought from a charity shop recently.
It's a sort of hybrid dough/pastry made with yeast and self-raising flour as well as an egg, olive oil and salt and I found it very easy to work with so will be using it again with other fillings.4 -

Nice. Virtually every meal we seem to eat at the moment still seems to incorporate home grown beans, tomatoes & courgettes in some form. The freezer is full nd we can't bear to waste them so culinary ingenuity is being stretched now. We,ve had excellent crops this summer but even the favourites can lose their novelty somewhat !2
