Last night I made the Hairy Bikers delicious sausage casserole using up the last of a bag of frozen Mediterranean veg, we ate it with mash and green beans.

Shopping day tomorrow, so made fridge gravel veg peanut noodles with a few spring rolls I found in the bottom of the freezer!
I third that, it’s soooo good!

*goes to look up HB sausage casserole 🤭
Me too!  Looks much like cassoulet to me!!!

Last night was an Aldi moussaka - very nice.  I had a bit of LO mozzarella which I added to my portion.  OH had a mixed salad on the side but I served mine directly on top of rocket which was lovely.

Tonight is salmon - reduced at Watrose yesterday and I was assured it was good for today but should be frozen otherwise.  Will have rice with it and we have a large yellow courgette.  But there's farm shops advertising asparagus so I might see how that looks if I have time to stop on my way home from work.  (oh dear!! look at the time!!!!)

I remembered I bought some RTC haddock and sauce fillets the other day which deff need using up - also there's a couple of sausages that should be cooked too. Not quite sure how I'm going to combine those two into a meal so answers on a postcard too.

Must admit the costly lasagne LO I had last night was nice, but I do prefer my own, or a ping ping shop one - simply because of the lack of white sauce on last night's, which is my fav part.
