Tonight I did some chicken drumsticks, stripped the meat and did sweet n sour chicken with rice and prawn crackers. I added extra veg into the sauce:money::rotfl::T5

Last night we had chicken pie with garlic mash, spring greens, purple sprouting and leeks fried in butter. There’s enough leftover mash and leeks for possibly a lentil cottage pie tomorrow or Thursday.
Tonight we had chickpea and mushroom curry with garlic and turmeric rice, and some flatbreads. There is leftovers of that too, DH was delayed on his way home so grabbed something whilst he was out - it will do me for lunch for the rest of the week.Books read 2023 - 49/754 -
Guests have been despatched to the airport. Just realised its only 7 weeks until our holiday on the IoW so I am working my cupboards down a bit now plus my fridge. Because of illness and digestion problems I have swapped lunch for dinner so will have my main meal around 1.00.p.m.
Today I decided I shall use up some odds and ends I took a tin of tuna from the cupboard and a tin of sweetcorn mixed together and added a hefty dollop of IoW garlic mayo my DD brought me back from her quick trip after Easter.
Gives me a decent sized bowl of it and this will more than do me for three days .added some fresh ground black pepper for a bit of a zing :,
Ive boiled up a dozen or so small new potatoes so they will do me for couple of days at least.
Dinner/Lunch today will be some shredded lettuce ,the last of the cherry IoW tomatoes DD brought me home, some diced cucumber a bit of diced red pepper from the fridge, some chopped up bottle beetroot I was given, some of the tuna and sweetcorn mix with a little bit of grated cheese un top. This will more than fill me up and I have about two thirds of the tuna and sweet corn mix left.
Tomorrow I will have some in a Jacket potato, with a small salad bowl and the rest I will make into a couple of fish cake type things mixed with the left over crushed new potatoes dipped in flour, egg and breadcrumbs, and freeze for another day. So three meals made out of odds and ends and only really one lot of cooking to do on the hob for the new potatoes The jacket spud I'll do in the microwave tomorrow. three days meals sorted out of bits and pieces

Defrosted a beef joint today. I got a huge one from Tesco when they had them on offer over Easter. I split it into 2 smaller joints
so today we had roast beef, roasties (daughter had sweet potato), peas, carrots, broccoli, few frozen Yorkies I had leftover and gravy.We all had ice cream for pudding as well:money::rotfl::T7 -

The eggs were gorgeous with deep orange yolks, nothing like the insipid pale lemon ones from the supermarket.
My dinner/lunch was great and I'm still pretty full so will only have a snack tonight perhaps.

Lemon Chicken casserole. Made with a bag of preprepared badge which I wouldn’t normally buy but which was 30p and will make enough for three meals.
Just a shame I’d drunk all the white wine so there was none of that left to go in.All shall be well, and all shall be well, and all manner of things shall be well.
