@Florenceem - my thoughts are with you.

The vat of turkey chilli did not survive for jacket potatoes tonight - it was declared delicious by all and seconds were had by the kids! I put a small tub of leftovers in the freezer. I’m not complaining really, they walk to and from school up an enormous hill every day and do an awful lot of sport, so I would rather they eat extras of healthy HM dinner than fill up on other things.

So tonight we are having Malabar coconut chicken & spinach curry with rice (leftover from last night), and naan breads which are leftover from a Gousto meal.

    Thinking of you @Florenceem

Tonight leftover chicken was made into an omelette with some chorizo. I had some battered prawns cooked in the actifry. Both served with Jersey potatoes, coleslaw and salad.

Husband and I eat together but he just eats what I make for him. He quickly learned that if he wanted it to continue then it's better that way. I cant grumble i make all the washing up and he does all the stacking of dishwasher, cleaning the surfaces and emptying and putting away the washed utensils.  I'm a big believer in doing what works for you.

@Florenceem sending big hugs your way xx

Dinner tonight was going to be chilli with some Mexican rice (OH went through a phase of eating loads of it, so i stocked up, then he went off it...I swear he's part cat! She loves food until i bulk buy it) anyway, all these packs of Mexican rice are doing my head in so i had some with chilli...except that turned out to be sausage casserole 🤣 it actually had a lot of mushrooms (which should've been a giveaway as i don't put many in chilli as OH isn't keen) and beans, so it worked quite well. Sour cream and cheese also added on top.

Tomorrow i think is pizza night and I'll  make a curry for Sat.

Have noticed a lot of portions of things that were lingering in the freezer have been used up so i need to haveva rummage at some point and do some more batch cooking.

    Morning all,

I took some chicken out of the freezer yesterday (Thursday) morning and popped it into the fridge to defrost...it was still frozen last night (Thursday) so I was unable to make chicken fajitas as planned.  I have checked this morning and the chicken is still mostly frozen...

Do you think it will be ok to leave until tomorrow afternoon and make chicken fajitas for dinner tomorrow?  I don't usually worry but with it being chicken I don't want to make the family unwell.  I will obviously smell it and check the condition of it before cooking

I would use it. I have found that even with yellow sticker use on the day food, it is generally still ok a day or so later and yours is still basically frozen.
Salmonella is less of a risk now than it used to be as there is more testing and vaccination of poultry reared in this country.
Then again I finish defrosting meat including chicken in the microwave if I want to use it straight away. Not been ill yet.

You might want to check your fridge temperature though. Seems too cold if things are taking that long to defrost.
All shall be well, and all shall be well, and all manner of things shall be well.

Pedant alert - it's could have, not could of.

@elsien, thank you.  Yes it is 2 degrees but if food touches the back of the fridge it freezes... it's only been happening lately so I need to look at it (it's only 4 years old).

Fab, I will smell it tbs and it will be in the fridge until I cook it so I am sure it's fine :)

Mister CJ is having a Boys Night Out with our sons-in-law tonight, involving a curry and probably a few jars of ale, so I am all alone for dinner tonight hurrah hurrah! I have managed to reserve myself a Harvester TGTG bag so after I have dropped the boys off at around 8pm I will be picking up a rotisserie chicken, a bag of stuff from the salad bar and some bread rolls for £3.

Does the chicken have a bone in it? Its whole chicken that causes issues. boneless breast can easily be defrosted a little, sliced and cooked. Its actually much easier to cut when partly frozen.
