    OH made a roast chicken & the trimmings on Friday so I made stock with the carcass and gravy-flavouring roasted veg left (we put onions & carrots under the chicken when roasting for extra flavour) & today I made Chinese chicken & sweetcorn soup and chow mein with the stock & leftover chicken. 

    We’ll have that for tea with freezer popcorn chicken & a jar of mayflower sweet & sour sauce. 

    And I have enough stock left to make matzoball soup next week.

    We were planning to eat out this afternoon but after a brief look in the fridge this morning, I realised we had lots of bits and bobs that needed eating - very MSE! Three of us ended up sharing two chicken fajitas (l/o from Friday night), a bag of Caesar salad with extra cucumber and olives, and a couple of jacket potatoes. Eldest valiantly had a leftover torpedo roll with a hot dog. 

    Leftover birthday cake for pudding later 😋

    Woke up to pouring rain 🌧️ ohhh well, most of the bank holiday was lovely.

    LO lamb dry fried with Gochujang paste, peppers and spring onions served on HM flatbreads with pickled red cabbage, garlic yoghurt etc - I’ll have mine over salad.

    plenty of cheesecake left for those who want it
    Note to self - STOP SPENDING MONEY !!
