  • For lunch today we're having hm pasty from the freezer with some fried leftover new potatoes. Dinner tonight will be a chicken and veg stir fry with rice. I've made a vanilla and blackberry baked ricotta cheesecake for pud, will portion it up when chilled and put some into the freezer for another day.

    Frittata here too - loads of eggs to use up as DS has been away for a few days, so has missed his morning scrambled eggs :shocked:

    Will serve with Jacket spud and salad
    Note to self - STOP SPENDING MONEY !!

    Had sweet chilli noodles with salady bits & prawns stirred through. Tonight will be HM chicken curry with rice. Curry sauce already made just need to reheat and warm through the chicken and make the rice. So nice easy meals today.

    Lunch was rice cakes with herby cream cheese, smoked salmon and salad after a run.

    Dinner is pasta with mushooms and a sliced sausage in a tomato sauce. I'm trying to lose a couple of lb as my weight seems to have gone up since easter so I'm back out training again and have been trying to replace biscuits / choc snacks with things like cucumber and carrots.

  • Another picnic for lunch today at Beaulieu Motor Museum with the boys who loved it and we're so happily shattered this evening that He Who Knows has just gone for fish and chips!

    Got the chicken out of the freezer last night so going to roast that later and I'll have some of that tonight with some LO boiled pots which I'll prob also roast and perhaps some veg.

    I have some puff pastry in the freezer and some chicken soup, plus a tin of mushrooms so some of the LO chicken will get made into a pie.
