lazy butter chicken curry and rice tonight, sans rice for me.
talking of cooking whole chickens, I shove mine into a slow cooker with carrot, herbs, S&P, onions and celery and cook fry for the day. Then strip the meat, all the bones and veg stay in the slow cooker, cover with water and left overnight for amazing stock 🤌Note to self - STOP SPENDING MONEY !!

yesterday I got the urge for some Maine seafood stew so I jumped up and went to buy the ingredients. It was quite expensive (but cheaper than going to Maine from Florida!) but it turned out really good. We had leftovers for lunch today with plenty to put in the freezer for later.
Tonight sees us using the package of bok choy that will go bad while we're on holiday. It is also a big batch but I read on the net that it, too, can be frozen for later so we will do that.
This is my last dinner for awhile--we are going on holiday to Texas for a cruise and then a stop for Mardi Gras in New Orleans on the way back to Florida.3 -
Still full from a use it up salad I made for lunch so just had a couple of passion fruits with a scoop of ice cream as a treat and am now about to slope off to bed, night all, goldfinches.3

There's just enough of Sunday's roast chicken left over to make some burritos. I wanted fajitas really, but I'm going to have to pad the meagre chicken filling out liberally with beans, rice and cheese to make it look substantial, so burritos it is.3

I am hoping there might also be enough small bits to make a couple of chicken fajitas for tomorrow, but that might be wishful thinking!
I always roast mine upside down for the most cooking time and then turn it the right way for the last 20mins to brown.

Sweet chilli chicken thigh traybake tonight, roasted with anything that looks like it needs eating - two potatoes, a sweet potato, the last enormous courgette and a few peppers at the end.Books read 2023 - 49/756

Veg sausage and lentil stew tonight, to use up some last veg before shopping tomorrow. Will have a wholemeal pitta with it, maybe some tinned mandarin segments and dairy-free cream later.6
