Spanakopita tonight - we had kale in the veg box the other week, and were gifted 2 bags of spinach, opened packs of herbs and a pack of filo pastry.
All we needed was some feta, so prepped the filling earlier today and it's just an assembly job before it goes in the oven - I'll boil up some carrots and potatoes to go with it.

DH was ensconced in front of the TV watching snooker this afternoon and I had a craving for a slice of cake so spent some time making a vegan coffee sponge with vanilla buttercream and chocolate icing. Also made a lot of washing up! Dinner was spag bol then we had a slice of the cake with some frozen summer berries, their sharpness went well with the sweet cake.3

Wasnt in the mood for a Sunday roast today, so out came the slow cooker and husband had gammon, potatoes, carrots and cabbage. An Irish dish his mother used to make. Lots of gammon left over.
Daughter and I had pancakes with quorn mince stew. A winter warmer and very filling.4 -

Tonight I made a pan of soup and put some cheese and chive dumplings in it. (Self raising flour, chopped chives, vege suet, grated cheese)
Daughter had some for dinner.
I had quiche from freezer, husband had gammon, with salad and mashed potatoes with spring onions.
I found 4 bunches in the fridge in various stages of green to yellow, so some went in soup and some into the mash.
