Tonight I made a vegan cannelloni style recipe using lasagna sheets which I cooked first before rolling them up with a filling made of finely chopped broccoli, smoked firm tofu, nooch and vegan feta, then baked in individual oven-proof dishes, laying three each on a fried onion and chopped tomato base, a little olive oil on top then sprinkled a few sunflower seeds. Very tasty. After that we had a piece of home-made fruit cake and a cup of our usual Aldi decaf coffee.3

Tonight I’m making pan fried spice-dusted cod fillets served with sag aloo. The onions, potatoes, spinach and curry spices for the sag aloo were all free from the community fridge yesterday.2

We’re out with friends for an Indian tonight, we go with them around once a month/6weeks, always good fun. I stick with Tandoori mixed grill and hubby gets the chance to go wild with Naan and rice 😂Note to self - STOP SPENDING MONEY !!

I've been told I'm making chilli tonight. Off in a bit because while the home shopper (OH) bought mince we have no onions or tomatoes. Or beans I think. Def no tortilla chips or sour cream so need those too. Will look at the avocados/guac.

I meant to pass on this recipe for Goat's Cheese, Mushroom and Lentil Hotpot earlier this week but was so busy I forgot until this evening. I thought the end result very tasty and that the recipe could easily be adapted for other toppings too.
Today was so lovely and sunny I didn't want anything more than a sandwich for dinner followed by a coffee.4
