I am doing chicken curry/rice/naan bread for dinner. I have 6 eggs out ready for a Victoria sandwich mix to do in my Kenwood for tomorrow's lunch at Salvation Army.
I'm always surprised at how many eggs some cakes require.  My banana oatmeal gets only one, as does the apple cake.  The almond apple "pudding" (actually a cake) takes 4 which is why I make it so rarely.  That and the fact that ground almonds are much more expensive than flour.  I suppose I'd be happier to use a lot if I had the benefit of a big mixer that would beat the eggs into shape properly rather than just using a fork.

Thanks for the suggestions for lunch times (sorry I’m rubbish at quoting!!)

I’ve got a lot of meat in our freezer so this week we are working through that. Tonight was pork chops (freezer), potatoes, my own pork and apple gravy and veg (freezer)

  • We'd had a pub lunch so dinner tonight was cheese and biscuits, followed by plum sponge and custard. Rather yummy!

Brie - did the baking I planned. Went a bit mad with the icing sugar shaker on the first Butterfly cake so we will have to share that one with a cup of tea.

    Those cakes look lovely @Florenceem

Last night i cooked up some mince from the freezer, also used up some mushrooms that were starting to look suspicious, and found some sliced aubergine in the freezer of unmarked bags as well as some chopped onions.

That got made into a lasagne with some sliced courgettes which has been portioned and despatched to the freezer. Left over mince was had with spaghetti tonight and still a portion i might squeeze into the freezer.

Not really making much headway clearing the freezer for xmas food (which won't be long in coming), plus having to change the way i store things for cooking to account for no longer having a microwave. Gonna have to shift a couple of chicken carcasses into stock to make room, and before the gas prices go up again
