We’ve got the whole family over tonight, so we’re getting a takeaway as it’s easier when catering for vegan, veggie, pescatarian, Keto and ‘normal’ 🤷♀️Without getting political, I consider us very lucky to be able to choose our diet, too many people who are struggling to get food on the table at present, and those poor people in Ukrainian 😭Note to self - STOP SPENDING MONEY !!

I called by the Community Fridge on my way to do the week's supermarket shop earlier today, just as they were unloading yet anther massive delivery. I have been generally very fortunate with the items I source from the Fridge, and am very thankful for all that they do. They are a lovely bunch of volunteers there.
I am planning to make a big spanakopita spinach filo type thing with a tomato and spring onion salad to take in for a sharing lunch picnic at work on Monday, and they had an avalanche of spinach, spring onions and tomatoes at the Fridge so I was very pleased with that. I also picked up limes, bananas, potatoes, tenderstem broccoli, red onions, peppers and giant portobello mushrooms. Will be doing stuffed mushrooms for dinner tonight.3 -

I had the last portion of the Nigella mung beans with minted yoghurt this evening accompanied by a rocket and cherry tomato salad and a couple of slices of toasted wholewheat bread followed by a braeburn with a coffee.2

Left-over chicken from a roast a day or two ago, some garlic, hoisin, edmame beans and rice noodles. Should last me the weekend

Tonight we are having some salmon fishcakes which I made some weeks ago and froze (so yay! a tiny bit more space freed up in the freezer!). Will serve with salad to be good, and some chips which will let the side down a bit. Carbs don't work on Saturdays though, right?3
