Instead of tomato paste on the base I use Sacla pesto sauces with my 'exotic' toppings. Traditional tomato can drown the flavour of things like goat/sheep cheese, unsmoked meats etc.
My favourite is coriander pesto with chicken and the aubergine pesto goes well with left-over roast beef. The oil content of the pesto makes the base nice and crispy so if you prefer a doughy, deep-pan base you might not like this idea.0 -
the aubergine pesto is good if you're having to fit around someone who can't eat cheese, gives a rounder flavour than tomato which can be a bit harsh without cheese - and it works well for open puff pastry tarts.Eat food. Not too much. Mostly plants - Michael Pollan

Hello everybody, Happy New Year!
Can anyone give me a hand please, we making a pizza today as we had a roast yesterday.....plus I found the Jamie Oliver base recipe on here yesterday and I'm dying to give it a go
Do you cook the bacon bits before you put them on the pizza, or just put them on raw as it'll be in the oven for about 20 minutes?
Also the carton of passata is large so how do I preserve what I don't use, can I freeze it?0 -
I tend to put strips of bacon on the pizza raw so they cook while the pizza does. Otherwise they tend to end up being rather too crispy for my liking. Hope that helps, and good luck with the pizza. Now we make our own, we haven't bought a shop one since!
