I individually wrapped my green tomatoes in newspaper and put in a box in my cool room, and they have started to turn red.

Hi, I don't know if anyone is still looking for recipies? I found a receipe for tomatoes in oil, pickled tomatoes, baked tomatoes with chicken and olives that I am going to try (in addition to chutney and tomato cake). The tomatoes in oil sounds good for salads or as an addition to a sauce (I have a huge glut of green toms):

Green tomatoes in oil: 1Kg green tomatoes, 1 onion, 3-4 cloves of garlic, oregano, 1 dl of vinegar, salt, extra virgin olive oil. Put the whole tomatoes in water with half a cup of vinegar and some salt. Boil them for 30 seconds - Just long enough that it rises to a boil. Then drain them and cool. When cool, cut in half and season with garlic and onion slices, & a minimum of salt to remove all the water. Let it stand for at least 7-8 hours, covered with a napkin, then remove the water and onion and garlic. Put in jars, adding oregano and covering with olive oil. As for all the preserved tomatoes, take care to remove the bubbles (by pressing the tomatoes with a fork and around the perimeter of the pot) and leaving the jars open for a couple of hours before closing them (the ingredients must be full of oil, no bubbles, and the oil must cover the tomatoes). Store in a cool, dark place (even in a bag at the bottom of the refrigerator). Or, If you prefer, sterilize the jar. They will be ready to eat in 2 months. Pickled green tomatoes (a change from chutney?). Sounds quite quick and easy to make: 50g root ginger, 600ml white wine vinegar, 100g sugar, 6 cloves garlic skinned and sliced, 900g green tomatoes, sliced into segments. Bruise the ginger by tapping with a meat hammer or rolling pin. Put vinegar, sugar, garlic and ginger into a preserving pan. Simmer for 10 minutes. Pack tomato segments into warm clean jars. Pour the hot vinegar mixture over them to cover, Seal. This makes 1.4 kilos (3lbs).

Hi all, I thought I would let you know how I got on with these receipes in case anyone fancies trying them.
Pickled tomatoes: They was nice and easy to make. I used lazy ginger (a ginger paste) which made it even quicker. I'm just waiting a few months to try them.
The tomatoes in oil: seemed great although it was a bit time consuming to do but I clearly didn't manage to get all the air out once they were in the jar of oil (despite trying) so they ended up in the bin :(. If I tried it again I would slice the tomatoes before putting them in the oil and press the air out with a potato masher.
Baked tomatoes with chicken and olives: I liked this receipe but next time I make it I will make some changes. I found there wasn't much sauce and thought it could be more tomatoey so I will add a tin or 2 of plum tomatoes, maybe some tomato puree and increase the seasoning accordingly. I wouldn't recommend increasing the number of olives as they bring enough flavour already.
I also roasted some tomatoes and froze them to add to sauces I am making (a Hugh-Fearnley Whittingstall receipe).
Apparently the Jamie Oliver tomato ketchup receipe is really good (I didn't try it as my husband was a bit funny about green ketchup!).
  • Hello all,

I've got loads of green cherry plum tomatoes on my plant (have had lots of lovely red ones too, very lucky me!) and wondered if anyone uses them in regular cooking?

I'm sure it doesn't matter too much if they're regular sized toms or cherry toms, whatever ideas you've got, please share.

My mum makes a green tomato chutney but I wanted something to just use up in meals, so tonight I made a chicken thai green curry and put a load of chopped up green cherry toms in that and it was delicious!

Any other similar ideas to use up the rest of them? Can I just use them in place of red tomatoes?

  • I remember my Dad ripening green tomatoes when I was little - he used to wrap each individual tomato in a piece of newspaper, lay them in a tray and put them somewhere dark, usually under one of the beds! He unwrapped a few each day to check them, and over a week or so they ripened up nicely.
I've never tried it myself, but plan to have a go this year as I've got loads of green tomatoes still clinging to the tomato plant. I was going to make chutney, but I already have 27 jars of chutney from the courgette/cooking apple glut and I'm running out of places to store it! There's only so much chutney you can eat :-)

put them on a sunny windowsill for a few days and some of them will redden.
make the most of it, we are only here for the weekend.
