What can I do with green tomatoes (NOT chutney)?

  • Hi folks

    I have a huge glut of tomatoes, green at the moment but I am sure will turn red.

    I am looking for a simple tomato sause type receipe you know the sort of thing you can throw mince or chicken in to make a bolegnese type meal.
    I am not a great cook but I am trying to learn so the simpler the better.

    Any other suggestions gratefully requested.

    You could make a green tomato chutney, I don't know how to make it though but remember one of my mum's neighbours using mum's green tomatoes to make it.

    I have had loads of tomatoes this year so i have been
    • Cutting them into wedges/chunks if big -leaving small ones whole
    • throw in a roasting tin
    • drizzle with olive oil, some cracked black pepper and sea salt
    • whang in the oven on a medium heat to raost for about 25 mins
    • just give them an occasional prod with a sppon
    I then have cooled them and bagged them in the freezer so I can make pasta dishes quickly -I have over 40 bags in there and loads still ripening ;)

    You can blitz them if you like to make passata ready for bolognaises etc...
    also you can add chillies, onions, courgettes etc to the veg when roasting..

  • I had the same problem recently - did a quick search on here and found lots of recipes for green tomato chutney - now maturing in the back of the cupboard!
  • You are so lucky! I lost all my tomato plants to blight this year:mad: . Was soooo looking forward to making green tomato chutney:sad: . In fact I didn't have much luck with anything except runner beans and one potato plant (from a sprouted potato in vegetable rack) that yielded 1lb potatoes:rotfl: . Oh well, roll on next year.

    I've made four batches of marrow chutney but have had to buy the marrows:eek: .

  • Billie-boy, someone told me you should grow tomatoes in pots - if you grow them in the ground they're sure to get some kind of lurgy (but I'm no expert as you can probably tell!)

    My tomatoes all ripened while I was away (was gone whole of august). But at least my friend who popped over to water the plants got some nice presents each week! By early September they weren't ripening anymore and the ripening methods never worked for me before - so chutney it was!

    Yes I'd probably agree with you there, although a long, long time ago (about 25 years) I grew bush tomatoes in the ground (I'd grown the plants from seed) and had tons of them but the garden was very open and it was a very good summer. This summer has been so bad. I also had loads of pepper plants in pots outside, again grown from seed. A couple of them produced peppers but these have been eaten by (I assume) slugs:mad: . Probably should have grown them indoors but didn't have the space and how do they get pollinated when they are indoors:confused: ? Having said all that I had a couple of tomato plants in pots last year and they both succumbed to something very early on before they'd even flowered. So maybe I'll just give up :rotfl: .
  • I grew tumbling tomatoes so grew all of mine in hanging baskets and they still got blight during all that rain.

    My way of dealing with it was to sit for 3 hours and cut every leaf and remaining flower off all the plants, leaving just the green tomatoes. They then all lived for another 6 wks and I was able to harvest a lot of red ones as well as lbs of green ones that I put in a bowl or three around the house and was able to pick off about 6 or 7 a day. yes some of them didn't ripen, and some got blight so couldn't ripen, but I extended the life of the plants by over a month and still managed to get a harvest so felt very lucky!
