I placed mine in a large glass bowl on the kitchen windowsill, where the sun catches it, and they've nearly all ripened up.If your dog thinks you're the best, don't seek a second opinion.;)0

Last year, I put them in a cardboard box under my kitchen table and probs 75% turned red and I had them for lunches!! Some people will put a ribe banana in there to speed things up. Ironically, this yer, I shall make cutney!!!!0

Hi, I don't know if anyone is still looking for recipies? I found a receipe for tomatoes in oil, pickled tomatoes, baked tomatoes with chicken and olives that I am going to try (in addition to chutney and tomato cake). The tomatoes in oil sounds good for salads or as an addition to a sauce (I have a huge glut of green toms):
Green tomatoes in oil: 1Kg green tomatoes, 1 onion, 3-4 cloves of garlic, oregano, 1 dl of vinegar, salt, extra virgin olive oil. Put the whole tomatoes in water with half a cup of vinegar and some salt. Boil them for 30 seconds - Just long enough that it rises to a boil. Then drain them and cool. When cool, cut in half and season with garlic and onion slices, & a minimum of salt to remove all the water. Let it stand for at least 7-8 hours, covered with a napkin, then remove the water and onion and garlic. Put in jars, adding oregano and covering with olive oil. As for all the preserved tomatoes, take care to remove the bubbles (by pressing the tomatoes with a fork and around the perimeter of the pot) and leaving the jars open for a couple of hours before closing them (the ingredients must be full of oil, no bubbles, and the oil must cover the tomatoes). Store in a cool, dark place (even in a bag at the bottom of the refrigerator). Or, If you prefer, sterilize the jar. They will be ready to eat in 2 months. Pickled green tomatoes (a change from chutney?). Sounds quite quick and easy to make: 50g root ginger, 600ml white wine vinegar, 100g sugar, 6 cloves garlic skinned and sliced, 900g green tomatoes, sliced into segments. Bruise the ginger by tapping with a meat hammer or rolling pin. Put vinegar, sugar, garlic and ginger into a preserving pan. Simmer for 10 minutes. Pack tomato segments into warm clean jars. Pour the hot vinegar mixture over them to cover, Seal. This makes 1.4 kilos (3lbs).

Hi,
For a small number of tomatoes why not try fried green tomatoes. Cut the tomatoes into slices about 1/4 inch thick dip in flour then beaten egg then into polenta (a fairly coarse one is nice as you get a good crunch) and fry in a shallow pan in olive oil until they just start to turn golden and then flip and do the other side. Eat as a side dish or snacky lunch dipped in relish or mayo (or garlicky mayo) or do them as one dish in part of a meze of antipasti type thing.0 -
Bit of advice needed guys.
I have just harvested the last of my green tomatos, and was planning to make a chutney, but i have no got enough vinagar, how can i store my toms until i can afford to go out and buy some ( about 2 weeks) will i be able to freeze them?

I think I would be inclined to chop them and cook them off a bit in what vinegar you have, then freeze them, when you get the rest of the vinegar carry on as normal.

I think green tomatoes can be stored for quite a long time. I once read that you could keep them in wooden drawers in a cool dark place carefully spaced and when wanted to use them you could ripen them by putting a ripe banana in with them.
But if you want green tomatoes just store as long as necessary. You might find more info on greenfingered forum.0
