    Lemon puddings

    Jar of lemon curd, tub of double cream, lemon zest. Whisk it all together till it holds its shape, into ramekins. I froze mine and had one last night, 30 minutes out of the freezer was all it needed. Simple but light and lemony with none of the metallic tastes that the condensed milk ones had. Probably be nicer still with HM lemon curd.

    Ooh... sounds fab, and as I have made the error of actually inviting people over for a meal in a week or so, it could solve my pudding problem. I bet it works with orange curd too...
  • When is your week off Redo? You sound like you could do with one after your busy and neverending project :).

    Yep, one of those easy things that is more than the sum of its parts and can be prepped ahead. You could sprinkle some appropriate crushed biscuits on top as a decoration. Or toasted almond flakes for orange I think.

    End of the month, we are now in the annual 'house sitters, oh rats, look at the mess' flappy panic. OH is going great guns at the outside stuff but I'm tied by time and general ouch inside so trying to do small bursts. Pan cupboard tidied yesterday and a general clear up. Today is ironing mountain.

    Soft chocolate chip cookies:
    Mix 4oz butter with 5oz sugar (half white, half brown). Add an egg and mix until smooth. Stir in 4oz plain flour, 1oz cocoa and a teaspoon of baking powder. Bash up a block of chocolate (we did white and brown) and tip in the chunks. Heaped teaspoons, nice and far apart, onto a baking papered tray, and then 9 minutes at 170 fan. They spread out and level out so don't worry about neatness. Made 18 nice (bottom of mug sized) soft cookies.

    He liked them so much that we made another batch of cookies for everyone else, white chocolate this time - so 5oz plain flour, and no cocoa, and a dash of vanilla essence in with the egg. There are only two of those left :cool:

    The time just slips away at the moment.

    Positives:
    I am cracking on with the cleaning in short bursts and the house is looking much better.
    Boys have finished school so the school run pressure is off until September
    My business income remains stable, and is likely to stay that way for at least a few more weeks

    Negatives
    Too much spending, food bill particularly high and loaded with fast easy junk
    Too much eating of fast easy junk
    End of financial year stuff to do for the business, on top of full time work


    I bought 480 cat food pouches on Azn, taking advantage of the various offers and free credit at the time so at least I don't have to buy cat food for a while. £10 for an audible trial, £8 for spending £80, and £30 voucher for changing to their CC for Azn only spending and a one day only offer on the food itself made it a great idea, but it does take up a lot of room.
