I know, I read your freezer thing with trepidation. Mine is an ancient huge chest freezer and I will be sad when it goes.

Last night we had this chicken fajita pasta. It was ok but the onions need to be cooked with the chicken if I make it again. Added mushrooms and served sprinkled with coriander. I had mine with a jacket potato that was lurking in the freezer. Hard for me to judge as I don't really like anything based around cooked tomato.

Tonight or tomorrow needs to involve stir fry vegetables before the bag in the fridge goes off, but I think I will use it as a side dish to this salt and pepper chicken recipe, and do some of the oven cooked rice with peas.

This week I had an email from DSs college of preference, asking for a deposit on transport. £120! Non refundable, and must be paid in the next 14 days. The second choice college only want £50 upfront, also non refundable. The annual cost for either option is c£700 with a maximum bursary for low income of £150. This is post 16 education, and to me it is wrong that it is effectively means tested to those who live a couple of miles away from the closest college. The SSs got free bus passes a few years ago, but County policy must have changed :(

The salt and pepper chicken thing was excellent. I missed out the optional MSG, used sugar instead of sweetener, used mini fillets (RTC, obviously) rather than thighs, and proper oil in a spray bottle. One to make again.

  • That seems a lot of money for transport, particularly if it's non refundable . Children never stop costing you money, it's lucky we like them!

Its so wrong that it costs so much. Where we live, further education is literally miles and miles away with kids spending up to 2 hours each way to get there. And you have to pay so much...

School transport is crazy. We keep considering moving West... but we have such a good set up where we are. StarChild can easily walk to primary school now, and high school when the time comes. There is even a really good college and a new university campus within 15 minute walk from our house. Then I think maybe we should stay put for 10 more years while she is in education and then we could potentially move mortgage free.
Who knows what opportunities tomorrow brings though.

We knew when we bought a house here that travel for post 14 education would be a problem and then luckily the changed the local school to up to 16 so we had two years reprieve. I think I am more stressed about just how long the bus journey is than the cost. Depends a lot on what has happened with my current project by September too.

Pay day shuffle has taken place, and a minor rounding overpayment went to the mortgage. Credit card bill was enormous, so that hurt. This month will include 2 x car insurance and £60 autoaid breakdown renewal. Shopping round took a third off 1 car insurance but the other is the most competitive price already, and autoaid remains the best option for us even though both have gone up by £20 or so.

Foodwise I continue to cook my way through pinch of nom website recipes. I also used up an out of 'best before' tin of condensed milk to make lemon cheesecake and coconut ice from the carnation website.

Unnecessary spending? Two merino cardigans and a long cotton jumper in a sale. Will exit more elderly items in exchange.

Project remains busy, which is great financially but I am shattered. I have a week off shortly and am counting the days.
