Hello all - so sorry, I've been AWOL
I am typing typing typing. Have an actual deadline for submission now (Oct 1st) and it's frighteningly close.
had a bit of a tantrum the other day as I didn't know what I was doing - real lying on the floor stuff:eek: I am 55 years old....:rotfl: Hopefully I am back on track now
OH retires in 4 weeks, however his successor is in place so he hasn't got loads to do.. he has been in India for a couple of weeks, although it's been a bit of a saga as one of the party ended up in hospital with 2 broken feet :eek: Just goes to show how quickly things can change. Luckily friend is home now..

Had a baking day yesterday in the hopes DS and DG will visit today
I was looking at 'my' recipe book, the one I copy any recipe I like the look of and had to smile. Think the scone recipe was Monna's, in it was the line
1oz caster sugar. Only for sweet scones natch.If you want cheese scones substitute the sugar for a couple of oz of strong cheese finely grated. Never try both together. Nasty.

SO - I never seem to be able to make a good scone despite trying various recipies over the years. They are always perfectly edible but just not the nice big fat ones! Recently tried a recipe that Hester posted ages ago for a Lemon Curd cake - seriously yummy. I've got an old brown hardback notebook that I started years ago. The favourite recipe pages are spattered
it's falling apart now but I'll keep it - one of the pages was used by DS2 when he was learning to write - he's 50 now
He and DiL came round last night with flowers and a card for Mother's Day as they are away today and DS1 is cooking me a meal tonight.
VJ - you are not alone! I worked for a company years ago that seriously pressurised my department. Lovely bunch of ladies, one of whom once lay on the floor and had a tantrum like a 3 year old - it was done in fun but certainly took the tension out of all of us. She also put a large paper bag over her head one day with Send Help written on it. This is the recipe I used, think it was Monna's

8oz SR flour (chilled) I don't know if the chilling makes a difference but it costs nothing to pop a bag in the fridge for a while, so go for it.
2oz unsalted butter. I use Stork. People at church functions can live without butter.

5 fl oz milk.
Rub fat into flour. Add sugar (OR cheese). GRADUALLY stir in the milk. You may not need quite all of it Too much and you'll be pouring it on to baking trays.
Turn out on to floured surface and punch it about a bit (knead 2 or 3 times).
Pat it out to desired thickness and cut out. I use a 2 inch cutter.聽
Bake at 220 for 12 to 15 minutes. If you are very greedy and make bigger scones bake for a bit longer at a lower temperature.If you walk at night no-one will see you cry.0 -

My scones never go right either , perfectly edible , just never look like I want them to .
So tired today , ds thankfully has no football on today . So the high light of the day will be to clean my car out , it's yuck , need to work out what to use on the seats , muddy dog paws and children's marks
Then I'm running
Don't know how far , ran 110 miles this month ... still keeping me sain , more emails from my solicitor yesterday , sort an apt out this week ... its seams like it's taking forever , so need it done now .... anyway getting there
Time to put some up beat music on now and stop feeling sorry for myself , give myself a shake
And go food shopping at some point today , wonder what dead thing to cook for Sunday lunch :rotfl:

Oh yes SO, that is my recipe. I used it to make 200 scones for the church garden party when I was in Somerset.
In the event the rain came down in stair rods and the whole thing had to be shifted into the church hall. Only about a quarter of the expected crowd turned up. I put the left over scones in the church freezer. Perhaps they are still eating them!
burtha. Everything seems to go so slowly when you are going through it. Everyone seems to be dragging their feet and nothing seems to change. When it's all over you forget about the long days of waiting for something to happen, and in the future you will look back and it won't seem such a long drawn out process at all. Promise.
In the meantime, try to take one day at a time and make the most of it. Think of where you were 6 months ago and how things have improved since then.I believe that friends are quiet angels

Here you are SO - this is Hester's recipe as she wrote it.
I make a loaf with a full jar of lemon curd - always the cheap "smart price" version.
175g SR. flour
100g margarine
2 eggs
75g caster sugar
1 teaspoon baking powder
1 jar Lemon curd
Preheat oven to 180c
Cream marg and sugar, add eggs then flour and baking powder. Empty jar of lemon curd in and mix well. Pour into greased 2lb loaf tin and bake for 40 mins or so until cooked through.
I think the original recipe called for holding back some lemon curd to spend on top of the warm loaf but I always forget!
The original recipe was also to use a jar of marmalade which works well, as does pretty much any kind of jam.Small victories - sometimes they are all you can hope for but sometimes they are all you need - be kinder than necessary, for everyone you meet is fighting some kind of battle0 -

A freezer died on me a couple of weeks ago and to save the fruit I made jam, 19 jars of it !! Thought this would be a good way to use some of it up.If you walk at night no-one will see you cry.0 -
SO - be only made it once but if you can us marmalade don't see why you couldn't use jam. TBH if you don't like it you won't do it again lol. & If it turns out well you can let us all know
The weather report is for rain over the next few days so thought I might have a baking session but apparently no lemon curd in Liddly so I'll have to nip in to Morry's in the morning.
