Cooking for one (Mark Two)

Today so far all I've eaten is a muffin from the freezer, that I toasted and put a bit of grated cheese on.
I will probably ... nuke some of those kebabs I made a bit later as that's super easy to do. With rice probably as I've no bread/rolls/pitta to put it in. Oh, hang on, I've no rice either. I'll think of something ... probably spaghetti - and knock up a quick chilli sauce.0 -
Just read the Yoghurt pizza recipe above, yep I will give that a go. Cook same as "normal" type I guess?
, though I prefer to pop the base in the oven "naked" for a few minutes before adding the toppings (tonight it's passatta, salami chunks, olives and mozzarella), as I like the base really crispy:).

Afternoon everyone
I'm not in the mood for cooking anything at the moment, but after a couple of days of biscuits/cake and tinned rice pudding I thought I had better eat some 'proper' food today.
So I did scrambled eggs on toast this morning and a cheese sandwich for lunch, dinner will be a tuna mayo sandwich. I just can't be bothered to do anymore.0 -

Mixed meal at dinnertime.
Had a couple of slices of toast with vegan cream "cheese" and avocado. Then I had finally got round to using the filo pastry in my freezer - well I used a couple of sheets and put some fruit filling in it - wasnt very successful - but it was edible. Cue for rest of the packet of filo going to go in the bin.
Was going to have cashew cream with it and looked out a recipe to make my own. Ahem...only I muddled up the pages and put twice as much water with my soaked cashew nuts, when it should have been the same amount:o. So I got cashew milk - rather than cashew cream:o. Oh well - it's gone in the fridge and I shall use it as milk - as that was an experiment I was going to do at some point anyway. Had a quick taste of it - whilst waiting for it to cool down - and think that cashew milk should be quite nice then. So that's another type of plant mylk I can have then.0 -
It was really easy and nice for a change. I just cooked brown rice in stock with some chilli flakes until the rice was nearly cooked chucked in assorted veg from the freezer (spinach, broad beans, pepper, peas & leeks), a frozen pollock fillet and simmered until the fish was cooked, lots of black pepper and it was good to go.
The rain has stopped and the sun is shining, so after a cuppa I'm going to get wrapped up and do some much needed gardening. Many of my summer bedding plants are still flowering but getting a bit tatty, we are forecast our first frost next week so time for them to go :ostill it's quite late in season here for things to have lasted as long so can't complain.
Home made pizza tonight with the base made from yoghurt & flour as I've a wee tub of greek yoghurt needing used up. There will be spare dough which I'll freeze. I might turn it into a calzone, I'll see how co-operative the dough is
Stew sounds great and I'll give it a try - got some white fish fillets in the freezer and just remembered I have some preserved lemons (don't ask) that I've been looking for an excuse to use in something.
I also have a second bloom on a few of my plants/roses but need to cut them back before the worst of the weather sets in - seems such a shameJan - June Grocery spends = £531.61
