    Made a fab fish & rice stew tonight but a definite chuck it in a see job so never to be replicated:). However, despite trying to make just one portion I've made 1.5, not the worst thing in the world but I just can't seem to get this sussed when I make from scratch. Still that's lunch tomorrow covered;)

    It's a bit chilly here at the moment but the sun is out and I intend getting out and doing some garden tidying.

    No cooking involved today just a case of nuking, assembling and reheating.
    B - Yoghurt, honey, chopped pear
    L - Celery Soup, Toast
    D - Moussaka, green beans, slice of garlic bread

    Caronc I like the sound of the fish stew, I'm such a creature of habit when it comes to cooking fish I really must try something new to me.

    Caronc I like the sound of the fish stew, I'm such a creature of habit when it comes to cooking fish I really must try something new to me.

    It was really easy and nice for a change. I just cooked brown rice in stock with some chilli flakes until the rice was nearly cooked chucked in assorted veg from the freezer (spinach, broad beans, pepper, peas & leeks), a frozen pollock fillet and simmered until the fish was cooked, lots of black pepper and it was good to go.

    The rain has stopped and the sun is shining, so after a cuppa I'm going to get wrapped up and do some much needed gardening. Many of my summer bedding plants are still flowering but getting a bit tatty, we are forecast our first frost next week so time for them to go :ostill it's quite late in season here for things to have lasted as long so can't complain :).

    Home made pizza tonight with the base made from yoghurt & flour as I've a wee tub of greek yoghurt needing used up. There will be spare dough which I'll freeze. I might turn it into a calzone, I'll see how co-operative the dough is :)

    Home from work yesterday and shattered, so I stuck a gf breaded chicken breast, in with a roti potato. Then popped the breast in a pitta pocket with rocket and cheese ,garlic mayo, and tom sauce smeared over the inner of pitta. It's the nearest I get to KFC, :rotfl: very tasty.

    Today I've been cleaning before visitors arrive ,so no brekkie, but just had a crusty warm gf roll, with salad and ham, followed by a pear, and a couple of strawberries in a pot of Greek yogurt with honey.

    Dinner will be a chicken arrabatia, as I lifted it out of freezer. Not sure what to have with it though!!
    Focus on contribution instead of the impressiveness of consumption to see the true beauty in people.

    Of course, start of with 1/2 cup yoghurt and 1 cup self-raising flour. Mix well and add more flour if needed so that you get a soft but not sticky dough that is firm enough to shape and roll out. I found the last time I made it I needed 1.5 cups of flour. It made enough for two CFO pizzas. The dough freezes well. Can also be used as flatbread recipe. I got the recipe from a FB group I belong to last year where it was being raved about, thought must try it and was so pleased I did.:)

    Just read the Yoghurt pizza recipe above, yep I will give that a go. Cook same as "normal" type I guess?

    Bit dull day to start, but sun out now, time for some mini gardening

    I just fancied a bit of lazy breakfast this morning, made a pot of loose leaf tea, and supped it with bacon & brown sauce sarnie, very Greasy Spoon builders' breakfast

    Picked up a YS Mince & onion pie in Asda, that is dinner sorted, with steamed fresh veggies

    Lunch was bit more of the YS ham, today eaten in a salad sandwich
    Eight out of ten owners who expressed a preference said their cats preferred other peoples gardens

    Must investigate how much yogurt I've got left now.

    Latest experiment - had some cucumber to use up and so did cucumber pickles (just cucumber, rice vinegar and honey). Okay...had a bit with those (in)famous CFO leftovers at lunch today. That won't go far to use up the honey I'm stocked up with (think I've got 2 spare jars in). Using that up now - having read the other day that all the pesticides the bees are ingesting as they harvest pollen is getting into our honey (I buy organic - but I'm still not convinced the bees arent straying over into chemically-treated land as well:cool:).

    Agh! So much food I'm-no-longer-eating to use up. Ahem....was watching a video of one of the cooks I've come across on YouTube yesterday - in which she explained everything in her larder. Yep...got most of that in mine too. But...she's got a lot less shelf space than I've got in mine now and she is feeding a family of 4..cough. Mind you - we're back onto the single people wanting as much variety in our diet as bigger households - so still needing the same amount of storage space....:cool:

    Got out some coconut milk powder - for having a go at making my own coconut milk. Must have a go at that in a minute - would be handy to be able to get the exact quantity I want (rather than opening a tin).

    Experiment to do on beyond that - I've bought myself some probiotics and got lined-up to try making coconut milk yogurt.
