So perhaps a lower-calorie variation on lemon meringue pie? I've not had that in a long time - but the luxury version sounds intense, no wonder you only need a little. I have lemons to use up, but I'd better not make sorbet - not enough freezer space!I think a bit of sunshine is good for frugal living. (Cranky40)

If you topped it with meringue, it wouldn’t hang about for long, Cherry. What about a few jars of lemon curd?
happy hump day to you all. Lots to be done this week and little progress so far. I’m feeling absolutely shattered and disturbed sleep isn’t helping. Yesterday was an nsd which was good and despite the lure of the pizza, dinner was from items already in including from the 10 for£10 deal from the frozen shop.Today, I have a 9.30 appointment then need to get stuff underway and out the door.

Today’s ten o’clock meeting has cancelled. This should have sparked a flurry of activity yet here I am, browsing diaries. Yesterday saw two work items out the door and two meetings agreed for next week so some work is being done. Today, a lot more is needed including chasing up some information requests. On other news, last night’s dinner made use of some stuff that had been lurking in the freezer for too long. It’s slow but inroads are being made and leftovers will provide today’s lunch for me. It is so cold here and we have had a sprinkling of sleet but nothing on the ground so far. Hopefully I won’t need to go anywhere today.Right, with a view to doing something more than hibernating, I will get started along with popmaster.

Well, it’s Sunday again and days seem to be flying past. Is it my imagination or has time sped up compared to January? I can remember a place I worked in when I was early 20s that had a thank heavens we got paid night out the first Thursday after the end of Jan payday. It was glorious. Chances are it wasn’t affordable but unmissable.DH is away so no chats with mr wii today. He went on Fri and gets back this evening by which point, both stew and lasagne will have been made. He finds both too carby. It also means that food is also sorted for consumption during the rugby. The rugby also means that I won’t have my usual coffee meet up.Today I am determined to reclaim my kitchen while dh is away. He takes control of it generally as he does most of the cooking but some things that bother me can be changed while he’s not here.

Holiday has been booked for 8th of April (I think). It’s a cruise but it’s from somewhere I’ve never been but would like to see a bit off. Unfortunately it’s quite a troubled area so I wouldn’t go unless I was part of a semi organised group for a shot spell. I’m determined to get caught up with all my year end stuff so will just have to keep an eye on emails etc while away. It’s for just under 3 weeks which is a long holiday for me so fingers crossed that I avoid getting homesick. I now need to get cracking on with gathering stuff up for it.
workwise, I’m still dithering through what needs to be productive. I’m behind on some stuff and today need to get emails issued before heading to Dublin for a two o’clock meeting. On other news, all funds relating to my mum’s estate have finally been distributed. Given it’s a seven way split, it’s not a life changing amount but it’s gratefully received. The amount promised to ds has been transferred while dd is to provide account details.I am feeling ridiculously tired but think it’s to do with my most recent client being 43 miles away and I visit at least twice a week. The final 6 miles are country roads. I do not enjoy driving.Right, need to crack on. Today I am grateful for
