    Have spent all morning chopping veg! I can understand why people buy it pre prepared! 

    Stew is in the slow cooker with beef, onions, carrots, swede & parsnips. I will add potatoes in another hour. They go in a bit later otherwise I find they all break up & go to mush. 

    I made some soup following a recipe on old style money saving board. 2 carrots, 2 parsnips, half a red onion, a teaspoon of curry powder & chicken stock cube with water. Once the veg was soft I left it to cool a little then blitzed it in the blender. Had a bowl full with a little salt & pepper for lunch 😋 One portion left for a quick lunch this week while I’m working from home. 

    The rest of the carrots & swede have been steamed & mashed together. Once cooled I will bag up into portions and freeze.  

    Tomorrow morning I will put all the ingredients into the slow cooker for a chilli. Thankfully not so much veg prep! Peppers, onions & courgettes, beef mince & tin toms, tin beans & chilli powder.

    Takes less effort to eat after a hard day working when softer. 
    Soup sounds great and you'll be grateful all the prep is done when cooking other things.

    This veg meal sounds lovely. Well done on a virtually free fry up even if bits were missing. Glad life is returning to normal again.

  • Thanks SW, it took a lot of prep but the swede, carrots, onions & parsnips went a long way! 

    MF I will definitely make the “curried parsnip” soup again 😋 I had a portion for lunch yesterday. 

    I made a beef mince chilli yesterday for dinner with peppers, courgettes & onions, tin toms, half a tin of cheap baked beans & 1/4 tin of kidney beans. Leftovers are portioned up and frozen. I think I will have the rest of the tin of beans on toast for breakfast later. 

    Will get up in a min and feed the dog. It has just stopped pouring with rain. Then a cup of tea and back to bed for a couple of hours until the morning dog walk around 7.30am.

    The sun is shining and there is a nice breeze. Have just hung some washing out. It is forecast to get up to 20 degrees here in the next few days ☀️

    Hopefully I can get caught up with washing and it will be nice for the week when DF arrives. We have indoor and outdoor diy jobs lined up & gardening and a couple of days out if we can get petrol.

    Well done on hanging washing out. Weather is nice here, just got in from work.

  • Wednesday morning nice & sunny dog walk. Much cooler in the mornings so needed a coat. 

    Stressy day at work. One more day to go. Spoke to DF on phone, fetched DS’s gf washing in as she had gone to work & DS wasnt home yet, then walked the dog round the pond nature reserve in the last of the evening sun. Fell asleep on the sofa after dinner and now wide awake 😳

    One more day at work on Thursday 6 cases to clear & then packing up. Hopefully then I can relax and sleep patterns will get back to normal. 

    Ds will arrive in the afternoon. He filled up his car before the petrol crisis & has not been far since, so he has enough petrol to get here. We still have petrol stations closed according to DS and his gf who are both going to work. DF will try to fill up as he gets into the county. I haven’t used my car since shopping on Friday so I still have 2 bars on petrol gauge. Hopefully things will get back to normal by the time he goes home. 

    I paid my credit card in full this month. Only spends for the rest of the month will be over the next week with diy & hopefully days / meals out. I have the £300 one off payrise which I saved but no longer need for specialist chair as work are paying, but I still want to keep control of my spending and make it go a long way!

    The queues have stopped up here and it seems like things are normal again.

    The queues have gone and my local petrol station had it but none in the New Forest. It is so good that your dad is coming down. Let's hope things sort themselves out v soon. It is great that you will be having a break from work for a bit and it will be soooo good for you to see your dad.
