It always intrigues ME how people think their way is the correct way, and act all aghast at people who don't agree, and think that anyone who thinks differently to them is wrong!
I think there are lots of ways to say 'thank you' to someone for sending you a gift (assuming that you can't do it face-to-face) that I would find totally acceptable.

The only thing I'd find unacceptable - and very disappointing - would be to receive no thank you or any acknowledgement at all. :)

Yes it CAN make a difference to the weight! I used to have a good friend who wrote lots of penpal letters that I sometimes posted for her, and so I know attaching extra (craft) stuff to the letters can take it over the normal standard letter rate.
Not sure about this - with a first class "small letter" stamp you're allowed up to 100g. Adding a bit of glitter and some stickers won't put you over this unless the width is greater than 0.5cm.

Stamp prices have most certainly increased massively in the last decade but you do get quite a bit for the money. I know, for example, that you can post a DVD or game for £1.27 unless it has multiple discs or a particularly thick booklet.

If I send a postcard from a weekend or holiday away I'll do it when I'm away and buy the stamp wherever I am. I don't have any elderly relatives. My last grandparent died a few years ago. I don't see the point of keeping stamps at home when I rarely write letters.

I recently received a number of gifts for anniversary. I thanked most via whats App, some by a phone call and others by text.

A friend of my parents sent a gift, way beyond what I expected. They are elderly and haven't been in the best of health. I sent them a thank you card as I thought that they would actually get some pleasure from receiving post. I must have judged that right, because I received a card, thanking me for sending them the thank you card. So do I now need to write to them to thank them for the thank you to my thank you?

Exactly this. Mail is calculated on weight and size now and has been for a decade at least.

Even if the weight is fine, the width might not be. And if the width is not fine, one standard stamp is insufficient.

That's lovely - and I think you got it exactly right.

We used to be friends with a guy who was a lot older than us, met him in the pub when we first moved to the area.

His family didn't have a lot to do with him, he used to pop round for a coffee at the weekends and we sent him a postcard from wherever we happened to go on holiday.
One day when we were at his house (we'd donated some furniture to him) he got out a box to show us and he'd kept every postcard we'd ever sent him.
He said he got them out every so often and read about what we'd been doing.

No, but you do know how pleased they were to get your card.
