thanks mrs m i was thinking pasta salad. no idea how to make fritttata not got a recipe floating around have you?
ill go have a look for one. need to get some veg used up so will make soup too.
i think its going to be a really tough one to not over indulge, if the weathers bad the plan is to go to a cafe nearby and im getting quite anxious which i know is silly but i really dont want to ruin this week but also i cant give up on my social life to lose weight that would be silly, especially as this is a for breastfeeding peer supporters to kick back and i seem to spend a lot of time taking it very seriously so chilling out would be good.
miss sparkle and froga it was interesting reading your stories, i think working out how you got where you are helps. its very easy to blame it entirely on a fat gene or an illness and in my case illness comes into it but its more than that. i was very underweight as a child, couldnt gain weight no matter what we did so everybody would feed me, in a desperate bid to make me 'healthy' the more they fed me the more i liked food and the more i got used to huge portions. it never helped with the weight but a very late puberty did the trick and i started gaining weight unfortunately the people whod been feeding me all these years carried on and it didnt dawn on me there was a problem with it. when i moved out i carried on eating 'normally' it was only when i hit around 14 stone i realised i had problems i lost some weight then found out i was pregnant, lost a bit more then fell pregnant again, had ellen and weighed 17stone i now weigh 16st3 and realise small portions and feeling a bit hungry is the way to go. currently ellen is showing the same signs i did as a child and the pressure to fatten her up is already starting, im determined not to let her down on this, if she gets thin and ill thats one thing but at the moment shes just a low weight but healthy and happy and developing normally so im inclined to let nature take its course. i now realise though how hard it must have been to fight against it when i was a child.
anyway sorry for the essay but thought id join those getting it down on screen and maybe someone can identify with it0 -
Hi there debtfree
Frittata is really a glorified omellette
I saute off some onions , bits of pepper, throw in some chopped up boiled potato or cooked pasta...mix some eggs n milk together and pour it on (will depend on the size of your pan -how much you need)..it doesn't matter if the liquid only comes half way up the veggies...and when it is nearly set..i put it under the grill to cook the top...leave it to cool and then cut into wedges...
I love this for using up, the part tins of corn, frozen peas..bacon.. anything you like really.. the ultimate though is a bit of soft goats cheese or feta... you don't need much but it is lovely.. the combinations are endless.. its a great packed lunch thing too... makes a change from sandwhiches..... You can eat it warm too:D
Don't get yourself worked up...its only one day ..you may as well go and enjoy yourself...in fact its not even one day..its only 1 meal... look at it that way and its so much easier to deal with... Have some nice filling porridge or something yummy for brekkie so your not starving when lunch comes around..then enjoy your picnic.... chill out and have a well earned relax time

Hiya sally and welcome
Good luck and enjoy the thread !
debtfree, was going to say soup but ya beat me to italso cheese hard cubed or soft, crackers/rice cakes/oatcakes etc, and fruit/salady either already bitesize or cut up to that size - ie cherry toms, carrots, cucumbers, grapes, apples, radishes etc ( actually that sounds like my dinner tonight, LOL ! ) and yes I agree with you on knowing how we got here helps - no one has to dwell on it or lie on the trickcyclists couch wringing their hands and going all Philip Larkin ( those that know that particular poem will know what I mean
) but understanding where we've come from helps work out where we are going to and how
yes agree wth MrsM - is only one day - actually the way I look at it is its living/thinking from meal by meal sometimes - there are some days or even weeks where even the best laid plans go wildy askew.
I seem to have started something with all the bums... LOL.. yay me :T
Have had quite a tough day, ended up not being able to eat at all until 2.45pm.. sigh..and then it was cheese and onion pasty from the shop... altho it was sided by a packet of crispsI also had generous amounts of cucumber, cherry tomatoes and carrot sticks with it ! I should make some time to make up a batch of cheese and onion pasties and freeze them, I'm sure than mine will be much nicer than dry old Ginsters. Good news is I have at last managed to extract some annual leave from my weekday job so will be off for a good part of next week, and I fully intend to set aside some time for stocking up and cooking for the freezer.
I've got some odds and sods that need using up so dinner will be an odd melange of pastrami, cottage cheese, salad, fruit etc with a baked potato. Also got some bargains at the Co op - Heinz baked beans 4 for a pound ( thats lunch at weekend work sorted tomorrow then ! ) 1.5kg bag of red potatoes for 64p and big bag of Coxes for 99p - that should last me the week out and beyond no doubt !" my veg box has just been delivered and its a good one this week :j so i am know starting to think about menu planning for next week......fritattas are looking pretty good! i think bubble & squeak might be up there too, i have loads of pots that need using up without me having to add a load of butter to them, any ideas would be good.
not much planned for the weekend, lots of taxiing ds to parties.....i wish i had his social life and hes only 5!!! whats everyone else up to?
debtfree, i know how you feel with worrying about going out but i say, have just a bit of what you fancy, as long as you dont get the 'ive blown it' mentality, one meal will not make a difference!!
have a good evening all

Layer sliced potatoes n onions in a dish with plenty of seasoning, pour in some stock or milk, cover with foil and shove in the oven...when nice and soft.. take foil off and crisp ip the top ....mmmm bacon on top for the last few mins...mmm..there are loads of variations you can do on that.... but i love it on its own-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -

Hi there
mmm.. i like it with stock best... lamb stock cubes are lovely (plus no cals)... milk makes it nice n creamy..but can be a b*gger to clean off the dish... i only put liquid about half way up..you can keep checking it and topping it up if it needs anymore. Sometimes its the potatoes that make it soupy..they breakdown too much....i love it with bacon on top..but don't put it on to soon as it dries it out..i just put mine on for the last 5 mins..but i like wobbly bacon:o .... i have put corned beef through the middle.... stewing meat .. but need much longer cooking
It really is an easy, tasty filling anh cheap meal...especially with a slice of HM bread for the dip-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
Potato wedges ? can make with very little oil if liked.. plain seasoned, with herbs ( I like to use rosemary & thyme ) with chilli powder, with garlic...have a root around in your spice box and see whats available... make up a big panload, they're nice cold the next day too ( well, I think so :P )
Leek and potato soup ? and maybe stuffed baked potatoes... halve and mash up the insides with small amounts of milk/butter & a little grated hard cheese or some soft cheese, fresh herbs like parsley or chives if you've got em, maybe some chopped cooked bacon or ham if you have some... sometimes I add a beaten egg to the mix - then put back in the oven to reheat and go golden brown on top. They survive ok in the fridge for a couple of days and can be frozen also :)Also try making bubble and squeak jacket spuds, specially if you chuck some leek or onion in there - tis lovely with the greeny creamy inside and crispy skin outside !" Baggy, and a bit loose at the seams.. "~ November 8th 2008. Now totally DEBT FREE !~0 -
