Oh dear....visit to doctor: I'm 0.5 off being classed as obese, my blood sugars are 0.1 below diabetic and my chloresterol is up to 6.4! So, have to cut out sugar and fat as far as possible, cut the wine down to a glass on 3 evenings a week, oily fish at least twice a week, red meat only twice a week - and porridge for breakfast. Oh and at least 5 portions of fruit/veg - and exercise!!! HELP!!!!!!Resolution:

Thought I would share my favourite soup recipe. It's easy, quick, cheap, low fat, high fibre... and it tastes great!
Tomato and Red Lentil soup.
½ ONION
2 MEDIUM CARROTS
1 TBSP OIL
150g RED SPLIT LENTILS
400g TIN TOMATOES
1 LITRE VEGETABLE STOCK
1 TBSP TOMATO PUREE
JUICE OF ½ LEMON (OR LESS TO TASTE)
PEEL AND ROUGHLY CHOP ONION AND CARROTS AND SAUTE THEM IN A LARGE SAUCEPAN (WITH THE OIL!) UNTIL LIGHTLY COLOURED (ABOUT 5 MINUTES)
STIR IN THE LENTILS, THEN ADD TOMATOES, VEG STOCK AND TOMATO PUREE. BRING TO THE BOIL AND THEN SIMMER FOR 35-40 MINUTES UNTIL THE LENTILS ARE SOFT.
BLEND SOUP WITH A HAND BLENDER.
ADD LEMON JUICE TO TASTE
You can make this using Tesco value ingredients or expensive ones - the choice is yours (and I can't tell the difference!)

Today was hard, mainly because all of my super-slender colleagues were eating birthday cake in the office and buying huge filled, crusty baguettes for lunch!
Anyway, I had porridge made with skimmed milk and a banana for breakfast, 2 plums at 10.30 then more porridge made with water for lunch with a tablespoon of rasins and another banana.
OH made a fabulous singapore chow mein for dinner (an old slimming world recipe I used to love) and we had a small slice of rhubarb pie with a small dollop of low fat custard.
I am slowly getting back into the swing of things but its hard being constantly surrounded by all the worst food choices in work0 -
The dull days are the worst.
Gained a pound oops.

Keiss sounds like you're doing a cert ed or c and g 7407! hope your microteach went well, i did my 1st on ratio using non alcoholic cocktails to demonstarte and making a fabric rossette for my second. In my 2nd year now and loving it!

Hello to all I did not mention in person - how do you all manage to keep up, I find that if I just turn my head there are another 60 posts to catch up with, and all of them really interesting!
Anyway, today was a good day for me. In the morning I said goodbye to my good MSE friend who had come to stay with me and took me to Martin's show last night, then I went to the Herbal Medicine clinic at the University of East London, where a fully qualified herbalist supervises a bunch of students and you can get a cheap clinic and herbal medicines. The supervisor was very nice and even agreed to allow me 'non-working' status when I told her that I work a few hours per week from home for a charity. So the whole hour consultation plus medicines cost me all of £22, and the next visits will be even cheaper because they will be shorter (no need to get all that info!).
Then I came home, had some lunch and did my usual work at the computer , then a friend popped in (also work-related but we fitted in a nice chat!). Meanwhile in the kitchen I had a pot of beans cooking.
Then I had dinner with my family and I have just got online a few minutes ago to find a couple of really nice surprises in my email in-box:
1 - 50% discount for Yo Sushi restaurant, I printed one for myself and one for my DH so we might go out to dinner together on the cheap soon! And sushi is rice and veg (I am vegetarian so no fish for me) and I am sure it fits well with the SW regime!
2 - even better: I won two tickets to see the preview of the film No Country for Old Men, both DH and I really want to see it! How wonderful is that!
Anyway, food wise this is what today looked like:
Breakfast: 1 bowlful of leftover porridge (where our hero discovers that porridge can be successfully kept in fridge for 2 days, thinned with a bit of water and soya milk and re-heated, and it is just as good as freshly made!)
Snack: 1 apple
Lunch: Leftover veg turned into a soup by adding 1/2 stock cube and some broken spaghetti, sprinkled with 1 oz parmesan and a pinch of chili.
Snack: 1 pear, 2 dried apricots (for iron content hehe) and 3 brazil nuts
Dinner: pasta with aduki bean, tomato and sage sauce, kale with a little oil
Still positive, looking forward to the future but enjoying the present to the full.

Not a great day for me today which is a bit silly as I am having my first weigh in but in saying that I am having a week of eating up the bits and bobs left over from Xmas and trying to have healthy meals in between :rotfl: so today's exploits were:
Breakfast: Fruit and Fibre
snack: Almond Macaroon biscuit (last one)
Lunch: Home made bread, cheese, satsuma and a fairy cake (did some baking with the little one kept three out one each for today and one for him for tomorrow - the rest are in the freezer and I will take one out each morning for him to have after lunch)
dinner: roast chicken, new potatoes and carrots
snack: slice of banana cake (made with bananas going off but had one slice and have frozen the big 2lb loaf in three pieces and the 1lb loaf in 2 pieces - handy if people pop round).
not decided on tomorrows menu yet. Brekkie probably F&F, lunch soup and rest of bread then tea will either be lamb, pots and veg or a vegetable curry and rice - see what I feel like in the morning after my weigh in.

It doesn't feel as 'bad' as a takeaway one because its not greasy but its very tasty and it actually came off the back of a sharwoods jar so I tweaked it a little
Singapore chow mein
2 squares of fine egg noodles (Sharwoods ones used to come with 4 squares in a pack)
2 tbsp olive oil
1 clove garlic
1 chicken breast
1 red pepper
1 tbsp Madras curry paste
200g beansprouts
100g prawns
2 tbsp light soy sauce
4 spring onions
*You can use vegetable oil instead, this recipe had olive as it was allowed as a healthy extra on slimming world
-Heat the oil in a large heavy based pan and fry the sliced chicken until lightly browned
-Add the garlic and stir fry for 1 minute then add the curry paste and fry for another 1-2 mins
-Add the soy sauce and spring onions, peppers and prawns
-Cover the noodles with boiling water and leave to sit until cooked through then drain and add to the spicy mix with the beansprouts
-Toss around until everything is covered
This recipe works really well with pork or just veggies, OH uses more peppers of varying colours and less meat0
