    I can't run 3 inches!!!! So I am WELL impressed.. hubby runs 8 miles most nights..

    I walk miles and miles though.. I also walk quite briskly.. and did the 4 miles home from my training session today in about 40 minutes!

  • Hello everyone - you all sound to have such nice interesting stuff to eat - I can never think of what to have half the time and it ends with me making toast and overindulging...

    This morning I had to take DD1 to college again and I was going straight to acupuncture after I had dropped her off, and you are supposed to have had something to eat before the session, so I went to the drive through McDonalds and got an Oats so Simple - which is a major thing for me because I cannot usually resist the egg mcmuffins so I felt like I had done reasonably well there. Had wholemeal toast and light Philadelphia for lunch and then had lasagne and oven chips for tea. I wanted to ask Mrs M or any others of you who cook if any of you had a recipe for a low fat/lower cal lasagne. I LOVE lasagne but it is so fattening that I almost never had it and I only indulged tonight because DD2 was having it and I had bought it in M&S on Saturday for her and it was buy one get one half price.

    For all you hamper makers - I got a smashing bargain from Avon online earlier - they have this lovely Christmas Bubblebath - IT is in a lovely purple and silver bottle and is £4 for 500ml - however at the moment it is on offer for 5 bottles for £5 - I got 10 bottles for hampers and for teacher presents. It really looks like it is alot more expensive than £1 - plus post and packing was free with a code from here so I thought that was a great bargain. I am also going to make some gift mixes - layered brownie mix and hot chocolate mixes etc - I have been collecting jars for a few months now and have got about 20 ready to start. I don't do many hampers really - just for my sisters (2), my two best friends and mini ones for my friends' daughters (4). I also give gifts to my sister's carers as she is disabled and has a team of carers who are really good, so the bubble bath will be good teamed with a candle or something for them.

    Way to go, PigPen!

    You walk 10 minute miles? That's incredible, as running I average 11 minute miles! That's some going, and you must be burning off some serious calories!

    We had a mushroom and asparagus risotto tonight; tasty, filling, cheap and relatively low calorie.

    For four people;

    About ten mushrooms, quartered
    1 onion, chopped
    6 stalks of asparagus, chopped
    12oz Arborio rice
    Veggie stock
    A slosh of white wine
    a slosh of olive oil
    2 cloves of garlic, chopped
    salt and pepper
    a handful of pumpkin seeds
    some grated cheddar

    Fry the onion and garlic in the oil til soft, then chuck in the mushrooms. When cooked add the rice and make sure it gets coated in the oil. Add the white wine. Crumble a stock cube on top and add boiled water and asparagus. Cook til the rice is done; 12 to 15mins. Stir in the pumpkin seeds, salt and pepper and cheese. Delicious!

    Oh boy....so much so catch up on, so little time! Firstly, to everyone who has lost weight...well done...keep going....to those who haven't....keep going.... if anyone has gained weight....there's always another tomorrow...keep going.

    Well...this week I'm at my house as my boyfriend has a job in Scotland and so I've been trying to be good. I bought a huge bag of carrots and half a swede and some tatties...so tomorrow I'm making carrot and ginger soup:-

    1 Onion, chopped
    250g Carrots, peeled and sliced
    4cm Fresh ginger, finely chopped
    500ml Vegetable stock
    1 tsp Clear honey


    1. Fry the onion in a little oil until it is translucent (approximately 5 minutes). 2. Add the remaining ingredients and simmer for 15 - 20 minutes, or until the carrots are tender.
    3. Cool the soup slightly and place into a liquidiser.
    4. Liquidise the soup and return to the pan.
    5. Reheat the soup and serve immediately.

    which I've not made for a long time, so hopefully will remember how to do it!

    I've also bought some stewing steak, which will go in with the tatties and swede and remaining carrots to be stew for dinner for the next few nights.

    Today was...ok. Well....I went out with a friend shopping and we went to Lakeside and I had KFC for lunch. Its funny....I've not eaten it for over a year and have fancied it every now and again and so I decided to have some today. It was horrible! Now I remember why I stopped eating it...swimming in grease and tasting nothing like a chicken had been near it! So, following that revelation, I didn't eat much of it! Dinner has been a simple plate of grapes, tiny cubes of mature cheese (strong but means I don't eat so much), banana and satsuma. Twas yummy!

    As for now...back to tidying up my bedroom (that never ending task!)

    Dutchy...that risotto sounds lovely, but you only have to mention risotto in this house for OH to go....'wouldn't be into that', which puts me off as there is usually only the two of us here for dinner.

    Further to my earlier post I have eaten the soup with noodles, another apricot and hope not to eat again to-night..maybe dry rice cake if I am really hungry.

    Evening all

    Just got in from watching hubby bowl... well after i had ransacked the supermarket underneath in search of bargains :p ... Got some goodies :T ...they are a box with 2 funky mugs and a matching tin to keep your coffee in... they had 4 designs... guess who got 1 of each:rotfl: .. well im putting a hamper together for 1 sis and wanted to get coffee, fruit teas etc... and 1 set is going in SIL/BIL hamper... they were 2euros ...£1.50 :dance: .... i really have develope an obsession with bargains n hampers :o ... also got some lovely loose tea.... amaretto n kirsch and one redbush, strawberry n orange..smell yummy - no doubt sis will like them :D ... Me thinks my hampers are gonna end up getting a little "large" :D

    Anyway ladies back to normal....

    Anyone heard if the "flying frogga" made it home ok?:rotfl:

    Turbogran.... the tap water out here is fine.... but the stuff we had in suffolk :eek: .... i had to filter it twice and then shove it in the fridge..it was really "hard" water... I drink gallons... at least 4 litres a day - not including my tea etc... i feel so rough if I don't get plenty of water...plus it fills me up :p

    Hi Meanmarie... im like my dad :D ... think of something and off I go and do it.... drives hubby loopy :rotfl: ... can't be doing with faffing about thinking about it ;) ... when my dad was still here, mum once mentioned moving the back door and bricking up the old one...just in passing -went to the shops, got back 1hr later and the back door was half way through being bricked up :rotfl: she was not impressed:rotfl:

    Taplady.... my niece makes the best scones in the world... even better than the scrummy tesco finest jam n cream ones..and anyone who has had them --knows how nice that is :drool:

    Katkin..could you perhaps treat yourself to an individual bag of thos crisps that are haunting you? might be better than resisting and ending up with a "family" bag .... we have all done that one im sure :p
    The only thin bit of me is my wrists :D ....at least you aren't losing it off your feet... i used to :p

    Glad your dad is enjoying the healthier food... it is sometime easier to think of the men in our lives as children isnt it??? hide stuff in the food etc ;)

    Hgbels... yep im cleaning too..in fact im making myself stay in tomorrow and im gonna fettle the house to within an inch of its life..and then i can go for a wander on thursday....well its weigh day friday ;)

    Recovering spendaholic....
    to make a healthier lasagne...off the top of my head this is what i do..don't use recipes :D ...just use quantities to suit ;)
    1. throw extra lean mince in a casserole, add plenty of onion, grated carrots and you can add grated courgette too if you like it....
    2. put a lid on and shove it in the oven... (without any liquid).. keep an eye on it.. but it shouldnt stick..
    3. when the meat is browned tip it into a sieve and drain off the fat
    4. put the meat back in the casserole - i add frozen mushrooms n peppers... (got sick of fresh ones going to waste)
    5. shove it back in the oven for about 15 mins
    6. throw in a handfull of porridge oats, a couple of stock cubes..i use lamb as they have more flavour but aren't as salty.
    7. mix well and then add a tin or 2 of chopped tomatoes..of some passata.. some chopped mixed herbs and a pinch of sugar/sweetener and seasoning.... stick back in the oven for about 30 mins.
    8. Take out and check the seasoning and that it has thickened.
    • For the sauce warm some milk..whichever you use and mix some cornflour with cold water, pour in and stir over a gentle heat until thickened, add a good dollop of english, wholegrain or dijon mustard..some salt n pepper..... to suit your taste
    • when you layer it up..spread a bit of the white sauce on the bottom, then meat, then lasagne sheets.... do the same again and then pour the rest of the white sauce on top..... and on the top grate a bit of strong cheddar and some parmesan...you shouldn't need much... and then whack in the oven until golden
    The more carrots, onion, courgettes and oats you shove in..either the bigger piece you can have or what i do..is have a "normal"portion...but for less cals... and you can portion and freeze too....
    hope that rambling helps...if you need anything clarifying -just let me know;)
    Oh and if you like I can get a recipe off my mum for WW chicken lasagne which is very nice..but not "lasagne" if that makes sense:p

    Getting worried about that b***dy frog now...hope that she is all right, will kill her if she is IYKWIM...wonder if she cycled all the way to work and back, probably not a great idea on the first day, don't know how long it has been since she cycled anywhere.....FROGGA ARE YOU ALL RIGHT?
