    Morning all

    Just had 2 slices of HM bread -toasted - with butter :drool: .. yummmmm yummm

    Hubby leaving to play golf soon, so that will make for a quiet day for me today... me thinks i may have to get my jewellery making stuff out and see what i have...and if its worth making anything to go in my nieces hamper:confused: ... getting really excited now.. i love crimble... will be so strange though , not being in my own home.. i love doing an old fashioned traditional xmas.... still i will put my trotters up and enjoy...okok - i will try;) Im planning on doing lots of walking whilst we are back home.... just to get out and get some fresh air more than anything.. will get cabin fever if i stay cooped up...plus it will counter act any "extras" i have..well it is my birthday on dec22 too:D ....

    still haven't spent any of this months food budget :j ..im being soooo good about getting all that HM stuff out of the freezer:A .... it was going to be roast chicken dinner today - but hubby will be out until 6:30ish so im not faffing about at that time.. so it will be something like potatoes n onions in the oven, and HM sausages for hubby-im happy with just tatties n onions:D

  • Well I've just had a bowl of porridge. I hate porridge. I know it's a good food, slow releasing bla di bla but has a texture of slugs to me :eek:

    And I had to eat something as I'm baking cakes at the moment for a youth group cake stall at church, and they're looking rather yummy. It's bad enough I occassionally get mixture on my finger and have to lick it off!:rotfl:

    Roast dinner tonight at the inlaws. Not sure how good i can be, but I feel new inspiration at finding this thread!:beer:

    Hi all

    I've not been on for a little while as well as site being down i have had loooads of uni work to catch up with....
    Anyway I need your help pretty please, with all 4 of our birthdays within the space of 5wks (3 down, 1 left to go) I seem to have come to a bit of a standstill and need some inspiration to get back on track.
    I have been very good (healthy eating and excercise) and have lost 1st 1lb in total but to reach my target weight I still need to lose another 3st.

    My day WAS consisting of; weetabix for breakfast, salad for lunch, normal family meal in evening, with plenty of fruit for snacks if wanted. Just lately there have been crisps, chocs, cheese, and all sorts of bits n bobs sneaking in through the day, one problem i'm finding is as the cold weather is kicking in I don't feel like either cereal or salad, it's toooo cold.

    How are you all managing to stay focused.

  • Well ladies I'm really peeved. Just lost a pound. I know its better than adding one but still disappointed.

    Never mind eh? Onwards and upwards! Gym three times this week and I'll hope for a kinder reading next week.

    breakfast.. 4 rich tea bickies.. and several cuppas!
    lunch.. more than likely nothing.
    Dinner tonight is a chicken dinner.. mash, carrots, sprouts, suede and peas.. whatever is left goes in the pan for stew tomorrow!

    morning! just a quickie as I'm off to work, gave in and had a penguin biscuit last night but am not too worried as I think apart from that i did ok.

    have had muesli and a slice of toast so far, its roast beef for lunch not sure about tea.

    seriously..well done on losing that 1lb... just imagine that pack of lard.. its a good amount..keep up the good work :T

    Redmel...eeekkk:eek: thats a lot of celebrations stuck into a short space... thats enough to test the greatest resistance ... get that last one out of the way and then you can focus on having a clear few weeks between that and xmas my birthday is dec22nd - so i can stuff all mine into a couple of days -phewwww:p

    1st 1 lb is a good loss.. and if you have 3st left to go..you have allready lost 1/4 of what you want to :T ..that sounds better.. i have only lost 1/5 :rotfl:

    I haven't had salad for about 8 weeks now... i love it, but at this time of year it leaves me feeling cold inside :o ....
    I need comfort food ..... pans of hash, or thick soups help fend off the cold..
    Perhaps its time for you to switch to "winter" meals too...
    you have done soooo well allready, im sure you will get past this next birthday.... and swing back into your weight loss

    I have just trawled through every soup on the bbc food and delia sites, have printed off a few, so will try them. I am just weary about making soup my first attempt was disgusting so put me off till now.

    I am going to join in with the xmas target and aim for a 7lb loss by then.

    what about chicken n sweetcorn soup? my hubby is an addict...

    I will give you the "proper" recipe first and then my cheaper version ;)

    chicken n sweetcorn soup -serves 4

    prep 15mins
    cook 10mins
    nutrition per serving:-
    128 cals
    2g fat

    200g chicken breast
    1tsp salt
    2 egg whites
    750ml chicken stock
    250g creamed sweetcorn
    1tbsp cornflour
    2tsp soy sauce
    2 spring onions, diagonally sliced
    1. place the chicken in a food processor and blitz until finely chopped. add the salt
    2. lightly beat the egg whites until foamy.
    3. fold the egg whites into the chicken
    4. bring the stock to the boil and add the creamed corn
    5. dissolve the cornflour with a little cold water and to the soup-stirring until thickened
    6. reduce heat and add the chicken mixture, breaking it up with a whisk, allow to heat through, without boiling, for about 3 mins
    7. season to taste with soy sauce and serve straight away, sprinkled with the spring onion...
    Right - now for my version :p its cheaper and has less cals :j

    I can't give exact quantities as i make it as i go along :p -just adjust to suit the amount of stock you have
    • after you have pulled all the meat off of your chicken, throw it into a pan and make stock
    • strain and place stock back on heat...
    • grab a tin of sweetcorn (you may want 2 if making a large batch)and place in a blender (with the liquid) blitz and then add to the stock
    • blend cornflour with a little water and stir into pan... heat gently until thickened to the consistancy you want
    • you can now add any of the little bits of chicken you have left over..as many as you like...great for using those darker bits chopped up ;)
    • season well and serve.... soy sauce is nice but will make it go a bit darker.. not that we care:D
    • sprinkle on finely chopped spring onions...great for using up the greener bits ;)
    • I don't add the egg whites as we don't like "stringy" bits plus it re-heats better without.
