Ohh meant to ask did anyone get the Xmas recipe book?? I wanted to make the biscotti out of it but my copy hasn't come yet, even though I bought my countdown last week
If anyone doesn't mind sharing the recipe with me i'd appreciate it.

Yes there was an offer with the 12 week countdown, up until 29th October, where you got a copy of the new Christmas book.
I bought my countdown last week and was hoping to get my book this week but my consultant is off and we have a cover one (I'm not happy about as the one covering is a patronising b***h!).
I can't even leave earlier really as our usual consultant messaged me last night and asked me to cover the shop - which I'm happy to do, but can't stand this other consultant.:mad:Striving to clear the mortgage before it finishes in Dec 2028 - amount currently owed - £26,322.670 -

B - beans on toast
L - LO fish pie which has spinach in it; green beans
D - HM beef stew (from freezer) mashed potatoes
HEA - milk
HEB - bread
Syns - not sure yet but may have a couple of glasses of wine

Couldn't make it to class today but weighed on my (accurate) scales and had a STS which is a bad start to the challenge but a miracle due to last weeks 4 day indulgences!! Out for tea tonight for my sister's birthday but I'll try to make good choices...have a happy weekend folks0

Biscotti Recipe
Ingredients
50g shelled pistachio nuts
200g plain flour 1tsp reserved for dusting
1/2 tsp baking powder
2 tbsp sweetener granules
50g dried figs chopped into small pieces
2 medium eggs plus 1 yolk
Finely grated zest of 1 large unwaxed lemon
1/2 tsp vanilla extract0 -
Preheat the oven to 180 C / fan 160 C / gas 4 and line a baking tray with non stick baking paper
Spread out the pistachio nuts on the baking tray and roast for 5 mins. Remove and leave to cool
Shift the flour baking powder and a pinch of salt into a mixing bowl and stir in the sweetener figs and pistachi nuts.
In another bowl lightly beat the eggs and egg yolk with the lemon zest and vanilla extract. Make a well in the centre of the dry ingredients and stir in the egg mixture to make a soft dough. Knead briefly on a lightly floured work surface until smooth. Line your baking tray with more baking paper.
Divide the dough in half and roll each piece into an 18 cm long sausage lay them 10 cm apart on the prepared tray and flatten slighty with your hand. Bake for 25 minutes until golden and a skewer inserted into the centre comes away clean. Set to cool for 10 minutes.
Reduce the oven temperature to 150 C / fan 130 C / gas 2
Using a serrated knife cut each log slightly on the diagonal into 12 X 1 cm thick slices. Place side by side cut face down on the baking tray and bake for another 20 minutes turning them halfway until they feel slightly firm and dry when pressed. Transfer to a rack and leave them to go cool - they will get harder as they go cold. store in an airtight tin0
