    How about Fried Spaghetti :cool: - I can't remember where I got it from :o and have included some of the comments.

    Fried Spaghetti
    Here is a great way to use up that extra pasta. You can use sauced or plain, long or short pasta, as long as it is already cooked. Makes a great lunch dish or a good side dish with your favourite meat for a quick summer dinner.
    SERVES 4
    3 cups cooked spaghetti (or other pasta)
    2eggs (large)
    1/3 cup milk
    1/3 cup parmesan cheese or Romano cheese, shredded (fresh is best, but packaged will do)
    2 tablespoons fresh parsley or chives, minced (or mix the two)
    4 tablespoons butter
    Fresh ground pepper (use a lot)
     
    Melt the butter in a large, heavy non-stick frying pan.

    Have the pasta out at room temperature in a large bowl.

    In a small bowl, beat together the eggs, milk, cheese, fresh parsley and/or chives, and the pepper.

    Pour egg mixture over pasta and toss it well.

    When butter has heated past the point of foaming, add pasta and flatten into a big pancake.

    Cook over medium heat until the bottom forms a golden brown crust.

    Flip the "pancake" over and continue to cook until that side also forms a golden brown crust.

    Slide pancake out onto a hot plate, cut in wedges, and serve hot.

    Pass additional grated cheese!

    I added garlic and onion powder to it
    I had an Italian boyfriend in college whose mom used to make something very similar. The difference is that she would place cooked spaghetti on the buttered pan, then place (cooked) meatballs on top, then mozzarella slices, and pile on more cooked spaghetti. She would fry the bottom and then flip the entire thing (using another pan to do this helps) to fry the other side. Then, she would cut them into pie slices and serve. It was like spaghetti and meatballs pie. YUM!!!
    Great use for leftover spaghetti! My twist was to add a few Tbsp. of prepared pesto sauce to the milk & egg mixture, along with garlic salt & garlic powder. It's a nice, easy, tasty, quick meal!!(not to mention inexpensive!)
    I added some garlic and instead of parmesan, I used Gouda cheese. It’s lovely with a contrast of some soft bits and some crunchy bits.
    Great way to use leftovers!! However, I altered the recipe a little. I used 3 eggs, garlic powder and salt, as well as Italian bread crumbs in the mixture. It made the pasta crunchy and flavourful! I also used pasta that was in sauce.

  • I always fry leftover pasta with an egg and veg and have it for lunch, DS loves his with ketchup :)

  • I have been known to make extra so I can fry it the next day :-) Bu you could also use it ina pasta bake - old fashioned lasagna needed cooking first, so it's no different.

    Just took a packet of lambs liver out of freezer, and noticed it says it was previously frozen so don't re-freeze... Now I'm the sort of old styler that lives off woopsies and sniffs to check things are ok. I don't risk it, but I do try to think sensibly.

    I have searched but have only found another asking the same question in the lambs liver thread, but she wasn't answered.

    Do I really have to throw it away? Thanks for any advice.

    Are you saying that at the time that you bought it - it was defrosted? And you then froze it to save for later use?

    The BASIC RULE is that when defrosted you can cook the product and you can then safely freeze the cooked product, but you cannot defrost and then refreeze the raw product.

  • I think if it looks and smells okay it'll be fine. They are normally frozen under controlled conditions and can be re-frozen.

    I would only worry if it looked or smelled 'funny' or had ice crystals on it from freezer burn.

    Thanks for the quick answers.

    Sorry i wasnt clear. I bought it fresh vaccume sealed from asda chilled meat section. It was a woopsie and i froze it straight away when i got home. Usually I shop at morrisons and know theirs is fine to freeze at home in the packet without cooking first.
