Ah no, I wouldn't withdraw the offer. If I do it may mean that she cannot come and it's an important event in the career of a student at her stage of study. I've been there, but luckily was better financed by my uni for such trips and didn't have to worry about such things0

The kind of young people I know who have the gumption to travel for these kind of events are unfailing polite, kind and excellent communicators so I think you will be able to just enjoy the experience.:heartsmil When you find people who not only tolerate your quirks but celebrate them with glad cries of "Me too!" be sure to cherish them. Surely you'd give a guest some breakfast, not much trouble in a bowl of cereal or porridge.
If you have free calls at anytime, what's the problem in using the landline for a quick call.

Just be polite, explain what your rules are, and why you have them. Send an email something along the lines of:
Hi, I'm really looking forward to your visit, etc etc.
I thought I'd get in touch to sort out some details of your visit and let you know a bit more about me.
I presume that lunch is provided during your conference - what about evening meals and breakfast? If you need some cereals getting for breakfast let me know what you like. For evening meals I'm happy to cook for both of us if you'd like, or you can arrange your own. Bear in mind that as I'm a vegetarian I don't allow raw meat into the house.
Do you have a timetable for your days? That way I can make sure I'm around to let you in when necessary. Also what's your mobile number, in case we need to get in contact? Mine is xxxxxx
I have a washing machine and dryer so if you need to do any laundry just ask and I'll show you how these work. I'm assuming you'll be bringing your own bath towels / I'll provide them (amend as needed).

It's likely she'll be having some meals with her relatives I'd assume. Sometimes family have much higher expectations as guests.0

Personally I would never allow a stranger to stay in my house and/or hold a key to it. Sod that its just asking for trouble.
