The OP states that Iceland don't accept contactless but every one of their stores that I've used does.

I went to a good deal of trouble to establish that Morrisons have contactless capability at their petrol stations. But on the few occasions that I've tried it has failed.

I'm not sure why the OP listed Iceland as not accepting contactless, as that's one of the places I use for my TSB cashback every week. They most certainly do accept contactless.

A lot of pubs are accepting contactless now, which is useful, especially J D Wetherspoon's, as cheap beer becomes even cheaper - YAY!

I think you're missing the point. A contactless card in your possession is safe; a contactless card in your "protective wallet", which then gets lifted out of your pocket, is not. If you belive contactless is unsafe, then the only way to correct that is to carry cards which are not capable of making contactless transactions.
Then your completely missing the point.

The only way I could possibly carry a card NOT capable of contactless transactions is to downgrade my account to a basic account.

I didn't want contactless in the beginning but in the end couldn't wait for my card.

I think contactless is great. Much faster.

Many charity shops don't have contactless because they cannot afford to upgrade to the new technology.

    I am with you.

We also do not have internet banking, do not trust it for one minute. I have lost count of the number of people I know who have had fraudulent transactions made on their accounts and you only have to look on the forums here to see those that have had to fight the bank to sort it all out.

We manage perfectly well without and would rather not have the potential aggro.
Likewise I have NEVER done internet banking. I just don't trust it, that's without the fear of getting hacked or having my laptop stolen. The same applies with phone banking....NO THANKS!.

However on saying this, the Mrs does online banking, she knows I don't like the idea but accepts if any fraudulent expenses occur as a result of it, I told you so would come before any sympathies.

I think it may be possible for you to ask your bank to supply you with a non contactless card. They're not advertising the fact but I think it is possible. Some people cut the radio signal loop out of their cards to prevent the contacless function prom operating but this is difficult since different cards have the radio loop in different place, apparently.

I dare say that you could survive on a chequebook and withdraw cash from your bank whenever needed. Many are open on Saturdays now too.

I did ask originally when they replaced my old card after expiry. The bank said this was not possible unless I downgraded my account to a basic. which meant losing my overdraft. I really would not go to the trouble of cutting out loops, its been pretty safe in its shielded wallet for me to need to take that sort of action.

Most stores will accept me keying in my pin, regardless of whether they have a contactless method, which is fine by me.
