  • I love this idea for a thread! I make soup a lot. Tonight it's white bean, quinoa and cabbage, which I LOVE. It's basically leeks, garlic, carrot, potato, cabbage with a cup of quinoa stirred in. It's more of a stew than a soup tbh, and great for this time of year :-D
  • Tonight it is cream of mushroom soup, mushrooms chopped finely with half a finely diced onion, vegetable stock, pepper, to taste milk and cornflour to thicken. You can add garlic, but that takes the flavour of the mushrooms away

    Parsnip, apple and onion for us. I didn't use a recipe, just chopped the veg, sweated it in a bit of olive oil, then added the apple and a veg stock cube, topped up with water and simmered until soft. It was a little on the thick side after I blended it with my stick blender, so just added a bit of milk to get it to a consistency I was happy with. Delicious :)
  • I could live on soup all winter, so a great idea with the tread.

    I made a pumpkin soup yesterday, gave me 5 big servings
    Had a slice of pumpkin without skin, about 600 g. Diced it up, same with 3 small parsnip (carrots would work too), half a leek and two potatos. Fried a small onion in a teaspoon of oil, added the veggies, sauted for some minutes and added 1 litre veggie stock. Cooked for about 15 minutes, blended it all and seasoned with a dash of milk (1/5 pt probably) and curry paste

    Note to self, don't buy yarn!

    That sounds delicious - recipe please ? I used to frequent a small restaurant where they always had home-made broccoli & Stilton soup on the starters menu. It was bought to the table in a great big pot, and everyone just helped themselves. Trouble was, the stuff was so bloomin' delicious you'd fill up on that and not be able to finish your main course !

    Cream of celery is one of my favourites. It's doesn't need to be that creamy either as I just use a little milk after blending the celery, onions and a small potato with the stock. It's lovely - trust me, even celery haters like this soup :)

    French onion soup with a big toasted cheesy crouton on top is my other fav :cool:
  • Spanish garlic soup (sopa d'ajo) is an all time favourite here, served with a poached egg. It feels like it would burn off any marauding germs before they got a toehold!

    Also, another Spanish inspired soup I make often is; green lentil, cumin and spinach, which makes for an ominously dark green bowl but tastes like it would raise a tired body to new life!

    I also make spicy red lentil soup - which is like a let-down dhal with tomato and extra spices, yum!
  • My latest discovery for a delicious home made soup is sweet potato and red pepper, I use my soup maker so it takes just 28 mins, 500gms sweet potato, a large onion, 2 red peppers, 2 cloves garlic, 700mls veg stock, salt and pepper plus I add a tsp chilli powder for a lovely warming kick or you could use a tsp cumin for a variation.

    This is a very similar recipe to mine,but from Nigella, we are dodgy vegans so our cheese is dairy free and our milk is soya, it works with just about anything really, whatever cheese floats your boat:D
    • 1 onion (chopped)
    • 1 clove garlic (bashed)
    • 1 Parmesan cheese (heel if poss)
    • 1 cauliflower (chopped to pebble size)
    • 900 ml vegetable stock
    • 50 grams Cheddar cheese (grated)
    • bay leaves
    • 50 ml milk (or cream nutmeg)
    1. Saute onion with garlic til translucent and softened. Toss in cauliflower and mix with onions.
    2. Add in cheese and bay leaves if using Pour in stock and simmer for 10 mins.
    3. The cauli is small so it'll cook to tender in no time. Leave to cool for 5 mins, remove heel and leaves and add in cheese and milk or cream (any milk is fine, even skim).
    4. Blitz, taste, season with S, P and nutmeg, try to stop eating the whole pan there and then!

    Yes, one of my favourites is also sweet potato and red pepper but I roast mine in the oven with onion, garlic and spices for 45 mins before adding stock and blending. Makes a lovely rich warming soup.
