    Butterbean, bacon and leek soup. Smoked bacon works best for me.

    This sounds delicious and I have the ingredients in at the moment. Do you use a stock or anything else in it? :)

    An easy and quick one is chicken noodle with extra veggies grated or finely shredded in it. I use stock and the last bits shredded from a roast "rubber" chook, noddles or broken spaghetti bits, carrots, onions, kale / cabbage and anything else needing used up from the fridge.

    Some lovely suggestions in this thread OldStylers :cool:

  • Ooh, I'm in soup heaven! I could easily live off soup, bread, cheese and pickled onions for the rest of my days.

    I only bought a stick blender and started making my own this year.

    I have a really quick "cheat" recipe for chorizo and bean soup.

    I use a tin of taco beans or fiery chilli baked beans. Fry off a little diced chorizo, with onion or anything else you have lying around. Add the beans and heat up then thin down with a little stock as required. Sometimes I add tomato pur!e or tinned toms if there's a tin open already.

    It's an "anything goes" dish and its lovely and filling/warming:)

    Best of all its ready in minutes!

    Bit of an odd one for me tonight but I'm still using up fridge stuff before I go shopping again.

    Ingredients:
    Half a large courgette,
    Half an onion
    Pack of baby salad leaves (rocket, spinach, red chard)
    Remnants of a pack of dill and parsley
    A handful of celery tops
    Veg stock
    Chunk of goats cheese

    Diced the courgette, celery, herbs and onion and saluted in a tsp of cocoanut oil until soft. Added veg stock to cover and simmered for 5-10 mins. Added salad leaves and allowed to wilt for a minute or two before blending. Season to taste and sprinkle over goats cheese. Yum! :drool:

    ETA: this soup has less than 50kcals a portion (if you omit the goats cheese) so ideal for people losing weight or doing the 5:2 diet.

    I ate a double portion as it was so tasty so I didn't feel hungry for my salmon & couscous main. Which will keep for lunch tomorrow, thankfully :)

    Me too! :D Soup is my go-to, all round meal food!

    I have soup nearly every day for lunch and occasionally for a soup and pudding supper. It's great to see so many new recipes and ideas here, many that are very modern :cool: But lets not forget the traditional ones like:

    Scotch broth
    Chicken and rice
    Minestrone
    Cullen skink
    Oxtail
    Mulligatawny
    Pea and ham

    These are all meals on their own. I'm sure there's many more to add to the list too :money:
