Soup Of the Day!

Now the colder months are upon us I love making soup so thought I'd start a thread that we can all add our winter warmers to for more inspiration.

Parsnip, carrot & fennel soup

Today's soup was made to use up fridge leftovers so I had a couple of bendy parsnips, a couple of bendy carrots, half a fennel bulb, an onion, half a red chilli, 2 garlic cloves and a small piece of ginger.

All chopped and saut!ed in a little butter & olive oil until softened before adding a tsp of ground cumin and 500ml veg stock, then simmered for 15mins. Blend in the pan with a hand blender and season to taste. I also added a sprinkle of cayenne pepper for that extra little kick.

    I am hooked on Broccoli and Stilton soup. I keep meaning to make a different soup but always pick the Broccoli one again. Just put it in the soup maker and its ready in 28 mins

    I often make a broccoli and apple soup, ready in less than 15 minutes on the hob. I bet it tastes great with Parmesan too, I'll try it next time :)

    I made Celeriac Soup yesterday.
    Very easy and quick but I hate trying to peel celeriac!
    Celeriac, small potato, onion and garlic all sweated in butter for about 10 mins. Then added 1L veg stock, seasoning, brought up to boil, reduced to simmer for approx 20 mins. Place in blender.
    If I've got some cream I add a drop, and it's especially nice with crispy bacon strips as a garnish, but it's fine on it's own with nice crusty bread.
  • I had red lentil and tomato soup yesterday. Very easy, just need red lentils, can of tomato soup, can of tomatoes and a bit of garlic, salt and pepper and a pinch of sugar if i feel a bit extravagant i also throw some celery and I serve it with crunchy bread. Yummy!

    I just made Delia's smoked bacon and lentil soup - yum! I now just have to try and make some room in the freezer for some of it.

    Some time ago I had a load of carrots that were well past their best, so I thought I'd try a soup - the first time I'd ever made soup. So here goes.


    One or two onions, chopped, fry gently in butter for a few minutes. Peel and roughly chop the carrots, throw them in with the onion. Add just enough water to cover the carrots. Add a vegetable stock cube, a good teaspoon or two of coriander, a good glug of orange juice, some salt and pepper. Simmer until the carrots are cooked through. Tip the whole lot into a blender and blitz it until smooth. I thought it may be too runny, but I actually ended up having to add a bit more water as it was really thick. The end result was delicious, if I do say so myself - I was quite chuffed to say I'd just made it up as I went along. It also freezes really well, so make a big batch, freeze it in portions then just heat a bowlful up when you want a quick evening snack.

    The rule in our house is that if it is soup, there is unlimited bread and there is always a hot pudding (crumble/sponge and custard) as long as they eat what is in their bowl.
    I have 4 boys who love soup.

    I was talking to the other mums at the school gates the other day, one laughed and said 'you actually MAKE your own soup? Like they did in the war?'

    Now I really feel old style:rotfl:

    Apple soup ? There's a idea. I've been out in the back garden today chopping my apple trees down ready for winter. I've got a mound of apples and still one tree to go.
    I made soup of the weekend with all the assorted veges i had in the freezer, so that's a slowcooker full is seperated in plastic bags in the freezer.
