I made a big pan of curried squash, lentil and coconut soup. I added an onion and 2 cloves of garlic to it for added flavour. Lovely!

Does anyone put a cut up potato in their soups to thicken them up a bit ?
I always do as i dont like thin watery soup.
I do if none of the ingredients I'm using will provide a natural thickener. Potato is an excellent thickener, as are lentils.
Ok, report back on the Moroccan Carrot & Lentil soup I made earlier. It was a resounding success, according to half a dozen hungry young rugby players! :T
A little light on flavour (imo on early taste test) so spices could easily be increased or expanded (I added extra cumin and a touch of cayenne) if you prefer something a little spicier.
It made absolutely gallons! I think the recipe quoted 8 portions but I filled my entire oval Le Creuset casserole pot which I believe holds around 4-5 litres and fed six hungry mouths plus have enough left for at least 5 or 6 light lunches.
Total cost (to me) was 40p for 4 packs of ready prepped carrots at my local Co-op (should have been £1 a pack) and the rest was store cupboard ingredients, apart from having to buy a new bag of lentils (£1.20) to use just a cupful.
Even the pumpkin seeded bread rolls only cost me 10p each as I picked them up reduced price last night alongside the carrots. Bargain meal today :T0 -
Broccoli and blue cheese going into my little soup maker this evening. I love that little machine and I think is my most used kitchen gadget. Two portions of soup in the time it takes me to have a whizz around the house to tidy up. I think tonight I might float a poached egg in my soup too!0

I add a potato to thicken soups if they need it.
I will try the "frozen" mushroom soup tomorrow.
I decided to make one soup recipe a week as I can freeze extra portions, but there are so many great recipes on this thread that I may have to do two batches a week.
I can see if this carries on, I will either need another freezer, or I will be supplying the neighbours.Grocery challenge 2017 January £158.74/£200

At the weekend I made the carrot & coriander soup from the first page of the old soup thread linked to on this one (SarahSaver's recipe). My dad can be a bit fussy about anything "weird" or "spicy" but he troughed this down. Dead easy to make too.They are an EYESORES!!!!0

Tonight beetroot, potato and spinach soup. Cook potato and beetroot in advance (I cook 3-4 of each and then store in the fridge for future use). Chop onion and spinach, saut!e in a bit of oil, add cubed beetroot and potato, hot water and a bit of marigold stock powder, simmer and then blend. Garnish with a bit of crumbled feta, or a swirl of soured cream, or even yogurt.
Will also have coleslaw in vinaigrette and apple crumble.Finally I'm an OAP and can travel free (in London at least!).0 -

I'd like to recommend this soup. I made a pot using a smoked ham hough instead of the bacon and it was lovely. Really filling and tasty.
The ham hough made me think of doing yellow split pea and ham - so its on my to-do list0
