Pyx - any tips on how to incorporate veg into meals? I really struggle. I find it very difficult to eat boiled piles of veg as I find them very bland and obviously don't want to load them with TOO fattening sauces.....I try and add peas, sweetcorn, beans to rice and I have a killer trick for boiled carrots with a teaspoon of honey, knob of butter and a dab of mustard, which means I can will eat an entire plate of carrots....any ideas anyone?

Well, despite having loads of recipes, I'm a bit lazy to follow them!
However, most of my cooked meals are stir-fries. With or without meat. I find that if there is some meat in them, that makes it tasty enough not to need sauces. I use lots of herbs, and things like the green pepper sauce, which gives it a kick but isn't too hot.
The best thing for jazzing up the stirfry in the absence of meat is a dollop of one of the Sacla pasta sauces/pestos. I love them! Can't stand any other make of pasta sauce. I don't just use them in pasta, but in all sorts of things.
Sometimes I use them instead of oil to actually 'fry' the veg in, then cover and simmer until al dente.

Sometimes I make a veg risotto, with a dollop of pasta sauce at the end.

Sometimes I cook the veg in the water with pasta, then stir the pasta sauce into the whole thing!

Tamarind paste is quite nice, too.

Or veg stock granules mixed with a bit of water and stirred in.

Or with tinned chopped tomatoes and some dashes of the green pepper sauce.

    Beki,

Sorry to hear that. Maybe you could just keep to this thread and nothing else on MSE.

I did wonder if you were ok as not seen you around for a few days.

I don't like the idea of you worrying on your own. We are here to support you. But you have to do what you think is best.

Take care and have a hug and box of jaffa cakes :)

    Yours

    ((((MU)))) thinking of you.

Flybaby, i have one of these. http://www.ebay.co.uk/itm/Spiral-Slicer-Cutter-Kitchen-Tool-Vegetable-Fruit-Spiralizer-Twister-Peeler-New-/131533911340

I use it to make vegetable noodles which i use instead of pasta or noodles out of courgette/carrot etc. I also use to make spirals or julienne of cucumber/courgettes/carrot/green beans which make great quick salad or i add to whatever i am cooking for a couple of minutes to soften and they disappear into the dish for example any kind or soup/casserole/pasta sauce/rice.

Melly, I love how you give all your plants names! Gordon and Kevin are brilliant names! My flowers in my pots at the side have finally come out, haven't a clue what they are though! One lot are orange and spiky, and the others two shades of pink like a raspberry ripple....any ideas what I should call them! :D
