    While hubby was washing the car I noticed 3 miserable overripe bananas which I decided could be just what we need to make peanut butter and banana cupcakes! DS2 offered to mash the bananas and help me bake but unfortunately I discovered DS1 has used all the eggs for omelet this morning! So I sent DS1 to my sister in law's house to ask for a couple of eggs. Sadly they've also ran out of eggs and they're keeping their NSD too. The dilemma was - a) to buy eggs to save the bananas from being thrown out? Or b) bin the bananas and keep the NSD. Votes were taken and the unanimous decision was to keep the NSD! What have we been turning into? Have we become sad, miserable people, taking these NSD a bit too far (some of our friends think so, but we don't care. They are not responsible for our bank accounts, are they?)

    Personally I would more than likely have declared the 'no eggs to make muffins and hence use up sad bananas' as requiring an emergency spend ie an allowed spend,to buy the eggs.... That's the great thing about the challenge:the rules aren't fixed.
    Could you still use them tomorrow to make muffins,and buy eggs tomorrow?
    You can actually make eggless cakes (and muffins I suppose) by replacing the eggs with bicarb and ordinary vinegar.Would you like me to post a link to the recipe?I've made it a lot (it's a dried fruit cake recipe,and it's nice).
    Check the numbers, marmite, the Narglehounds have done me proud - 17 NSDs!!!

    This is the recipe I used.Could you replace butter with vegan marg?
    Google 'eggless' or 'vinegar' cakes.There's tons of recipes out there. ;)

    We have right royal fabby figure of 275 nsds and with 24 canny folk actively taking part,that means that we have an impressive 11.5 average! :D

    See the above post regarding the Igor-Tatty nuptials/honeymoon.
    We still have June's challenge to finish off.......the Cauldron of Doom is groaning under the weight of all those NSDs, but still room for plenty more!

    Igor tells me they have decided to have the wedding the weekend after Wimbledon finishes, so just a few weeks to get everything ready! Chef is already soaking a mahoosive fruit cake in turnip brandy. Pass the fire extinguisher, and don't turn on any light switches, folks....

    Right, we'd just better choose a camping site we are quite sure we never want to visit again....just sayin' :rotfl:

    Next time you could also freeze the mashed bananas and use them when you did have eggs. I have several 'past it' bananas (I only like them when they're still virtually green) that I peeled and stashed in the freezer for banana bread or smoothies. The riper they are, the more sugar is in them too.

    NSD here, went out for coffee with a friend but she paid which was lovely, my turn next time.

    Weather here been glorious and sunny today, sorry to those who had rain. Still quite humid this evening too.

  • Hi marmite, no I am not vegan... Yet. Who knows maybe in the future? We never know... It's good to learn different ways of cooking so I can adapt depending on the stocks in the cupboard/fridge, NSD counts and bathe budget, such as in today's situation. Learnt so much today.
