This was one of the first soups I made - without the parsley it was in the first Delia cookbooks - and it is delicious. I used to mash it at the end and you end up with a really thick delicious soup and it will use up your dried butter beans.

Thanks everyone for all of your help! I tried a red lentil dal last night but dh hated it!! Was very bland - but I shall continue to search through the threads for something else. Not getting any money for another week now so am willing to eat anything!!!!!!Back Comping after a 2yr break! :j0

Red lentil soup is delicious and so easy to make. Just fry off an onion, add any veg you have spare (carrot, parsnip, potato, sweet potato, courgett, pepper are all good), add a cup of red lentils, a tin of tomatoes (or passatta) and a pint of stock. Cook for 30-40 minutes, until the lentils are cooked then blitz.
The beauty of this is that you can add spices as you wish. I've found that grated ginger is good, as is a pinch of cayenne and some paprika. You could also add cumin and ground coriander.

I have just pulled out all of the tins in my cupboard nd found lots of tins of beans:
* Butter beans
* Cannolini beans
* Black eye beans
* kidney beans
* Green lentils
Does anybody have any good recipies so that I can make use of all these tins? Im sure i brought them with good intentions, i just cannot remember what those were!;)0 -
You could make a bean chilli with that lot. Don't have a recipe myself handy though.0
