I have not made it yet, but one on my list to have a go at
Chilled Carrot & Orange Soup
Ingredients
450g/1lb Carrots, thinly sliced
1 tbsp Vegetable oil
1 Onion, finely chopped
3 tbsp Medium dry Sherry
600ml/20fl.oz. Fresh veg stock
Salt and Pepper
Grated zest of 1 Orange
Juice of 3 oranges
4 thin slices of Orange, rind removed to garnish
Grated Carrot to garnish
Instructions
1. Heat the oil in a pan, add the onion and fry until soft and transparent. Add thesherry and bring to the boil then add the carrot, stock, salt & pepper.
2. Bring to the boil again, stirring all the time. Cover and simmer for 45 minutesor until the carrots are very soft. Cool.
3. Pass the soup through a sieve or process in a food processor to a smoothconsistency. Put in a bowl, cover with clingfilm and refrigerate for at least 2 hours.
4. To serve - stir in the orange juice and zest. Pour into individual bowls and float a slice of orange on the top of each bowl, sprinkled with a little grated carrot.I, not events, have the power to make me happy or unhappy today. I can choose which it shall be. Yesterday is dead, tomorrow hasn't arrived yet. I have just one day, today, and I'm going to be happy in it.

Make an orange drizzle cake and if your not keen on oranges then give it to someone who is a friend as an unexpected gift .Pass on your good luck and you never know it may 'bounce back at you'0

Obviously juice them... Tesco were reducing their Jaffa oranges as the date was about to expire. Nothing wrong with them which is the crazy thing. But I got them for 3p per bag (No I did not take then all there were 100's)

I saw the guy in Lidl yesterday sorting through the oranges and he was pulling a lot of bags off display, must have been at least 30 bags went but I did not see what was done with them.
