Just a wee note on the mandarin curd that I made...I followed the recipe for my normal lemon curd, but obviously had to use more mandarins to get the same amount of juice. The mandarins were very sweet, and I didn't think about it and used the same amount of sugar as for lemon curd, so it's a tad on the sweet side for me, but still delicious in Greek yoghurt. Will reduce amount of sugar next year....if I remember!
The lemon curd is spot on.

Mandarin peel is soaking in vodka, smells really good. Was going to make that into a cointreau type liqueur, but daughter is coming over in July, and loves orange flavoured vodka, so have promised that I will not add sugar syrup. If she likes it as is, then so be it, if not can add the sugar syrup and carry on with original plan.

Have lemon peel soaking in vodka too, but not so much. Was going to make some limoncello, but think it might all be used up for lemon cologne to keep these flipping mosquitoes from biting me alive!
