gosh, what a lovely lot of ideas! And I also now know how to spell bananas. I like the idea of freezing slices and covering them in chocolate. I didn't know you could freeze them in the skins either. I think I shall also freeze some mashed with milk - my dd loves ice lollies- -I'm going for the simple stuff because its getting late and the bananas just aren't going to last another night - but thank you all for such a nice responses.0

bananas are really great to eat, even when they start to turn black (in fact i think - but i am not sure - that the nutrional value does not deplete or as much as other fruits). anyway, here are a few things we always do with bananas a bit past their best - banana bread, banana smoothies, chocolate muffins, brownies (anything with chocolate goes well with bananas), or simply try baking with them - if you grate some carrot, the natural sweetness in the banana and carrot will mean you do not have to add sugar and the cake you make tends to be very moist! finally, if try baking them - either put in a dish, sprinkle chocolate chips and a little sugar to caramalise (the sugar is not necessary, esp if they are going black - just to make it look nice) or simply peel, cut in half length-ways and put on a grill...the sugar in the banana will naturally release and you get a warm gooey sweet treat in moments!....Hi, we’ve had to remove your signature. I have seen condensed milk that is already caramel, so if you can find that, it will save on having to do the butter, broawn sugar and ordinary condensed milk bit of the recipe.

Ok I have about 6 bananas and the skin is quite brown now, any tips what I could do/ make with them ? Other than throwing them away..0

Banana Bread is always good. You can freeze the remaining ones for a future baking session. They don't look good when they defrost but I think they work better than fresh over ripe ones.0

Banana muffins they are always a tasty treat kids will love them
8oz Plain Flour
4oz Sugar (whatever you have in the cupboard)
2tsp baking powder
Half tsp salt
4fl oz milk
8fl oz vegetable oil
1 egg
2/3 ripe bananas (mashed up)
+ a good handful sultanas
Preheat oven to about 170C (mines a fan oven and a bit temperamental so tend to stick to 160C)
Put all the dry ingredients into a bowl.
In a measuring jug pour the milk in and then add the vegetable oil upto to the half pint mark. Add the egg and then whisk.
Throw in the bananas and the sultanas
Add the liquid and mix until just combined (do not overmix)
Put 12 muffin cases into a muffin tray and spoon the mixture in (should be about three quarters full)
Pop in the oven for about 15 mins until golden brown:jmember of the thrifty gifty 2011 :j0 -
