    Ahh I didn't think of smoothies, the only thing is I 'borrowed' the fuse from the blender for my printer and haven't replaced it yet! :/ Might have to buy a fuse!

    BANANA FRITTERS

    Serves 2

    INGREDIENTS

    ½ a pack of batter mixture
    2 bananas
    A lot of oil for frying
    A little sugar for sprinkling on top

    METHOD

    Make up the batter, according to the instructions on the packet, in a bowl.

    Peel the bananas and cut them diagonally into 5cm (2 inch) pieces. Put them into the batter.

    Put the oil into a small saucepan, small frying pan or wok to a depth of about 1cm (½ an inch) on a medium heat. After a couple of minutes, drip a little bit of batter into the oil. If it sizzles and puffs up, the oil is hot enough. If not, wait a minute and test it again.

    When the oil is hot enough, put the banana pieces into the oil. After about a minute, turn them over.

    When the batter is golden brown and crisp on both sides, fish them out of the oil. Put them on a plate covered with some kitchen paper to absorb the oil.

    If required, keep them warm in an oven at 140°C, 275°F, gas mark 1.

    ADDITIONS & ALTERNATIVES

    Fry the bananas for a second time.

    Use peeled, cored and sliced apples instead of bananas.

    Serve with a little sugar or ground cinnamon sprinkled on top. Serve with a wedge or slice of lemon to squeeze on top. Serve with caramel sauce, golden syrup or honey.

    TIPS

    Use a small saucepan, small frying pan or a wok to get the required depth of oil using the least amount of oil.

    If you are serving this as the dessert course of a Chinese meal, make sure that you cut each banana into an even number of pieces. In China, even numbers are good luck and odd numbers are bad luck.

    Ice cream.;)

    One and a half cups of cream (or use half cream and half plain yogurt if you prefer)
    Half a cup of sugar
    2 overripe bananas.

    Wuzz the whole lot together, bung in an ice cream maker and off you go. If you have a larger ice cream maker than my tiny one (makes three quarters of a litre happily), just double the amounts.

    You don't need special measuring cups if you don't have them to hand - just use a standard tea cup.

    My DH will virtually roll over and die to have this for dessert!:D
