I can vouch for this as I tried it only 2 days ago. It's absolutely brill - the texture is EXACTLY like dairy icecream, but it's just whizzed up up frozen banana.

The instructions state to freeze for 1 or 2 hours then blend, and I'm not sure if it will be as good if frozen again in the blended state, but as someone who didn't read the full instructions before just bunging some bananas in the freezer and trying to make the 'ice cream' a day later, I can vouch for the fact that as long as you let them soften a little before whizzing, I think you can just freeze them for now and try this recipe in the future at your leisure.

I couldn't believe that in the comments someone had posted 'Does it taste like bananas?'. I'm not sure what they thought something made purely out of banana, with no added ingredients was going to taste of, chocolate? but in all fairness as it is frozen it is a very mild flavour. I can't wait to try adding some nutella at the whizzing stage and am currently guarding some still infuriatingly only just ripe bananas so that they get to the freezable stage. When you don't want them to, they turn black in a day, but I bought these on Tuesday and they are still just yellow!

Banana loaf is great for using up old bananas, even when they're all black.

    Make Banana cake.

    8oz Self Raising Flour
    1/2 teasp Bicarbonate of soda
    4oz Margarine
    6oz Sugar
    2 well beaten eggs
2 mashed bananas (you can use up to 4 if you like)
Add a little water to make sure the mixture isn't too stiff.
    Use standard creaming method.

Oven 170o / 3or 4 gas (depending on your oven) for approx 1 hour
    A loaf shaped cake tin.

I double up the recipe (which takes longer to cook) and use 2 tins, then freeze one.

If you aren't ready to make one, then mash up the bananas with a good squeeze of lemon juice and freeze in a margarine tub/poly tub, for when you do want to make one.

I have recently discovered the joys of freezing bananas. Peel, cut in half, wrap in cling film or chuck in a bag. Take one out when you are making a smoothy and just use it frozen. Makes your smoothy nice and ice creamy!

You can use ripe bananas as an egg replacer in many cake recipes, roughly 1 banana to 1 egg. Make sure you use self raising flour or add baking powder.

Stick them in the blender with some milk.

Sit back and relax with your milkshake.
